Grilled Tilapia with Mango Salsa

I actually just made the mango salsa because I was looking to top my blackened salmon with something fresh. This is a GREAT mango salsa recipe. I made it extra spicy with an abundance of fresh jalapenos, but everything about the flavor was perfect. This was also my first time cutting a mango (dicing to be exact) and I got A LOT of help by watching a YOUTUBE video on how to do it! Technology is awesome because my mango was perfectly diced... Ok, ok..I butchered the first one =/

Quinoa Stuffed Pork Tenderloin

By far the most adventurous, yet easy thing I've prepared. It turned out beautiful and the family was very impressed. I added craisins instead of raisins and also some cayenne and jalapenos because we are spice-lovers here. I also used a meat thermometer because I was slightly worried about cooking the pork fully, but the recipe's time was right in line with what the meat thermometer read. CAMEAL, you rock! This is my all-time favorite recipe!

Pizza Casserole

I was looking for something to do with my Pizza night leftovers because I ended up buying too much pizza sauce and had leftover toppings like black olives, mushrooms and pepperonis. Due to making this as a leftover-user, I made the following changes: -I used pre-sliced pepperonis and cut them into fours -I used no-yolk egg noodles -I added more mushrooms and black olives (I see others did this as well) -I used spicy chicken sausage in lieu of ground beef (I have a no-beef family member) -I lastly topped with BOTH mozzarella and parmesan because I had it Basically this turned out delicious. I only gave it 4 stars because it is so high in grease and fat that after eating TWO large servings, I got a stomach ache! But I guess that isn't the recipes fault!!!

Blackened Salmon Fillets

I do love blackened salmon. I blackened my salmon and then used a recipe on here for mango salsa. It was a delicious compliment.

Greek Pasta

Pretty simple. There are lots of ways to spice up and add to this dish... And it can go either way - Italian or Greek. Sub the feta cheese for parmesan and it's not greek anymore IMO.

Oven Roasted Potatoes

I didn't have marjoram and have a family member who hates dill so I skipped these two ingredients and still turned out with AWESOME potatoes. I lightly greased my pan with PAM because it's been my experience that potatoes stick and these lifted from the pan perfectly.

Chococonut Chip Cookies

These cookies were excellent. I had leftover coconut from another recipe and just had to pick up some semi-sweet morsels. I added 2 Tbs of Milk based on other reviews which seemed to make them very chewy, which is how we like them. I'm not sure if it was the cookie sheet I used or what, but I needed to cook them an additional 2 minutes from the 10 minutes. =/ Other than that, they turned out perfect...

Nutty Brown Rice Salad

We have anti-Italian dressing people in the household so I had to nix that part of the recipe, leaving the flavor somewhat bland. I added some chopped jalapenos and cayenne to spice it up and thought it was delicious.

Chicken Tortilla Soup V

I had leftover roasted chicken from the night before and what an AWESOME dish to recycle it into. I shredded the chicken then put it over low heat with the garlic, cumin and oil... I also fried my own tortilla chips using vegetable oil and corn tortillas cut into strips then salted them to my liking. But I mixed all the other ingredients (including a salsa that was HOT and not too tomato-y) and thought the whole dish turned out great. I put a dollop of light sour cream on the top, followed by the tortilla strips and the Monterey jack cheese =) My family was very pleased!!!

Homemade Crispy Seasoned French Fries

Other than taking AGES to cook all the fries I had planned to cook, they turned out nicely. Next time I will use Peanut Oil to cook them in as I have heard that is better than vegetable oil

Lemon Thyme Rice

I ONLY make rice in the rice cooker nowadays because it always turns out perfect. But I added the chicken broth, FRESH thyme and lemon juice to the cooker and it came out fabulous =)

Farmer's Market Vegetarian Quesadillas

MMMMMMM. I added goat cheese to my recipe cause I had some leftover from another dish and was running low on cheddar. Also I recommend using ONE tortilla and folding it in half for a quesadilla rather than using two stacked with the veggies in between - - it tends to fall apart that way... Also I sauteed the veggies in butter and some garlic salt for extra flavor. Turned out fantastic!!

Authentic Louisiana Red Beans and Rice

I'm so bummed by the way this turned out! I followed the recipe to a T and it was SO thick! I "simmered" for 2 1/2 hours, but the bottom scorched and then the whole dish tasted scorched. I'm not sure what went wrong in the process, but considering how long it took, it was definitely disappointing.

Hamburger Vegetable Soup

I used ground turkey instead of ground beef and also substituted 98% fat free beef broth for the chicken broth. This was super easy and it's great to set on the heat while you wait for everybody to get home for dinner. I served with hot dinner rolls and it was a hit :)

Roasted Chickpeas

My chickpeas burned!! I followed the directions and actually had them in the oven LESS time than directed because I could smell em burning. Not sure what mis-step I took, but obviously something. Too bad, because I love chickpeas!!

Vegetarian Stuffed Poblano Peppers

YUMMY... We do Meatless Mondays in our house and this was a nice dish to prepare for the tradition. I bought the Boca soy meat and with the chili packaging it was just as good as using ground turkey or beef! I did add jalapenos, red peppers and onions to the mix for some extra flavoring and I like the way it turned out. This is a pretty easy dish!!

Almond-Crusted Halibut Crystal Symphony

My first beurre blanc attempt and I was VERY pleased with the result. The instructions are right on and I didn't screw up the consistency! I did have to substitute white wine for ginger ale for a family member who cannot have alcohol for health reasons. I researched it and ginger ale is a good sub for white wine if you can't find the alcohol free at the stores. The breading around the halibut was awesome and my family was really impressed with how it turned out. I don't even care for fish but I gobbled this dish up!!

Quick Brown Rice and Mushroom Pilaf

I should've gone with other reviewers on this and used regular rice instead of instant. My family thought the rice was great, but I didn't like the rice quality at all. I did substitute chopped almonds for the walnuts since I had them on hand and walnuts make a family member sick. Good flavor - just word to the wise: buy regular rice!!
