Chef John's Stuffed Peppers

My first attempt at making stuffed peppers and I have to say they were some of the best stuffed peppers I have ever had. I used red bell peppers and didn't have beef broth so substitued white wine. We ate them as left overs for several days and they microwaved just fine. I had a lot of stuffing left over so froze it and will have an easy weeknight recipe next time around.

Chicken and Red Wine Sauce

Not my favorite, also cut down on the sugar as recommended and too sweet for me. I brought it as a potluck for work and served over rice pilaf and my co-workers liked it but again, too sweet for me and the purple chicken (from the wine) just was not that appetizing to me.

Pork with Peach and Black Bean Salsa

This is kind of a staple mid week meal for us, really easy to make and really tasty. I have made several variations. For me the corn meal gives the sauce a little stew like quality so I think it is a necessary ingredrient. I like to add just a little bit of cumin to give it that latin taste and last night I made it with hominy (because I like it in Pozole) pretty good. Although this dish is perfect the way it is written.

Italian Chicken and Chickpeas

The first time I made this, I followed the recipe exactly and it had more of a tomato sauce, pasta sauce consistency and taste. Delicious! The next time instead of adding tomato sauce, I added diced Italian tomatos and no sugar. Threw in a handful of Kalamata olives (because I love them) and the dish was even better in my opinion.

Kidney Bean Tuna Salad

I doubled the recipe and had some fresh tomatoes so I added a half a tomato. Very nice. Might want to make a little extra dressing for the side.
