Thai Cucumber Salad

Wow! I made this tonight, and it was delicious! I am so pleased! I am diabetic and on a low carbohydrate diet, so I substituted Splenda for the sugar, and I did not have Cilantro. I made it anyway and I was so impressed that I joined allrecipes.com so I could write and tell you what a delicious, refreshing side dish this is! What a simple recipe and so delicious!

Key Lime Pie - Low Carb Version

I was very happy to find a Low Carb version for pie! I am not a lover of Key Lime Pie, but I could not resist, since I have not been able to have a piece of pie since I started my Low Carb Diet to reduce my blood sugar, as I am Diabetic. This was amazing! I love the Pecan Crust, that was my favorite part, and I will be using it to make other kinds of pie. I am trying to figure out a way to make a Coconut Cream Pie! I think I beat the cream too long, because my pie came out a bit 'tough' but it was still delicious! The Coconut was a definate show stopper! Yummy! It is very rich, so I was only able to have 2 pieces (I saved up my carbs all day so I could really go crazy, but it was too rich, and that is not a bad thing). I thought that crust and the pie could have had more Splenda added to them, as they were not sweet enough for me, but I like things sweet. All in all this was an excellent experiment, and I am going to have fun making as many different things as I can from this! For Low Carbers out there like me, it is a definate winner!

Taco Seasoning I

I followed recipe as is! I am so happy that I did because I almost doubled it, and was surprised how much this actually makes! It was delicious! I used it for Steak Fajitas, and I enjoyed it so much! Thank you for this recipe! Packets in the store have sweeteners added to them, I love the fact that I can control all of the ingrediants! It was excellent and I have already shared the recipe with someone!

Chicken Breasts in Caper Cream Sauce

Excellent, I felt like Julia Childs, as this tasted so French to me! I will add this to my dinner rotation, most defiantley! Wow! I was hesitant about the dill, but it was amazing! I am still drooling! Daddie's Chickie is awesome!

Creamy Cauliflower Salad

Excellent and Delicious! Wow! I made this with a new food processor I purchased and was very happy with how fine it chopped everything. It was like cole slaw, but with a different flavor. I am on a very low carb diet, so I asked a friend what there opinion was, since I made it with Splenda, and she said it was really good, very casually. I said out of 5 stars, what would you give it? She took another bite, looked at me and said "5 Stars" LOL! I was so happy to hear that! I feel the same way! This is a delicous and different salad and so yummy! I don't miss potato salad now! Thank you SOOOOO MUCH! I love this recipe and it will be a summer and picnic favorite!

Slammin' Salmon

SUPERB! I think out of 5 stars, I would give it 10 if I could! My apartment complex does not allow grills, so I broiled this, and it was out of this world! I blog on Facebook what I make and I am sure that I will get lots of requests regarding this recipe, as I RAVED about it! I can't wait to have guests over and make this for them. I make a delicious Garlic Dill Salmon, and NEVER thought I would find something comparable! This recipe rocks! And I love the Asian flavor! It was incredible! I let mine marinade overnight, and didn't cook it until late in the evening the next day. It was so flavorful and delicious! My cat was practically in my lap when I was having dinner! She's usally pretty good, but this was something she wanted as well. I had a huge piece of salmon and no other company so I shared with her a SMALL piece, and she didn't leave it! I am so happy to have found this recipe! It was incredible, delicious and actually quite simple. I specifically went and bought balsamic vinegar JUST for this recipe and I am so happy that I did! I have another huge piece of Salmon and I will make this one again VERY VERY VERY soon! Thank you so much!

Super-Simple, Super-Spicy Mongolian Beef

5 Stars! This was tasty, spicy and delicious! It was also easy to make. I made the sauce ahead of time, and purchased the meat, then put the sauce in with the meat in a freezer bag and froze it until I was ready to make the recipe (about 1 1/2 weeks later). I thawed, added to the wok, added a few green onions, and ate dinner about 15 mintues later. It was delcious! I am going to be eating at home a lot more now that I have found these delicious recipes! It's so much fun too!

Dijon-Tarragon Cream Chicken

I was not sure if I would like this recipe or not. First of all, the Dijon mustard seemed strange paired with heavy cream, and the tarragon smelled funny to me, but after I plated it up and added some sauteed mushrooms, I ate every single bite! It was delicious! I will make this one again and again, and I loved the French flavor! Made me feel like a French Chef!

Low Carb Cauliflower Leek Soup

Excellent! Smooth, creamy and delicious! I had my 15 year old God-daughter over, and she was a little reluctant to try this soup that had strange vegetables. Once she did, she loved it and so did I! It was amazing! I will be making this one again! It was the perfect soup on a chilly autumn evening. Superb!

Tunisian Lamb with Saffron (Keleya Zaara)

Seriously, the best! I ordered some saffron and was looking for a low carb recipe I could use. Everything was Saffron rice. I was not convinced that this recipe was going to be that great. I was a bit nervous, but I at least thought it would be edible. I was blown away! Totally! It is amazing! Simple, yet succulent flavors! Amazing! I would give this recipe more stars if I could! My 15 year old God-daughter was here and she was so excited she said that it tasted like a meal you would eat in a really good restaurant! It was truly amazing. I could not find the lamb stew meat, so I used lamb chops and it was incredible. I will be making this one again and again and again! Thank you for such a delicious recipe!

Splenda was used since I am diabetic and let me tell you, it was DELICIOUS! I was able to enjoy an entire desert and not worry about my blood sugar! Excellent recipe and I love the crisp on the top! Amazing!

Delicious! It is Lent and I am looking for delicious recipes that we can enjoy instead of the same old tuna casserole. This dish was incredible! I did not add feta, as I gave up cheese for lent, but when I make this again, I will definatley add the feta! I am sure that would this awesome recipe even better! Thank you for such a delicious recipe!

Mediterranean Fish Soup

5 Stars is not enough! Truly not enough! Making soup is my specialty and this soup is amazing! I had a special request for fish soup from a very picky eater, so when I found this recipe, I thought it sounded good. I was amazed! And the crock pot did most of the work! I used fresh tomatoes instead of canned (the picky eater won't eat canned) and I used fresh mushrooms. The picky eater gave this thumbs up, and after three bowls said that he wished he could eat more! Thank you for sharing this recipe! I will add this to my soup repetoire, as it is fabulous and wonderful for Lent! I was also skeptical about the orange juice and I added it, and am so happy that I did! This is a 10 Star recipe!
