Macaroni and Tomatoes

Perfect comfort food! I didn't have bacon grease and used fresh tomatoes (with juice)because I had tons of tomatoes from the farmer's market. Also added chopped fresh basil just for fun...YUM. Even my husband liked it (and he hates elbow pasta...go figure). Thanks for the recipe!

Gnocchi I

Awesome!! I have tried homemade gnocchi twice before, but this is by far the best (and easiest) recipe I've used. Mine came out nice & firm which I LOVED (some recipes can be a little soft for my taste). I think my husband and daughter would have liked them a little softer, but that's probably an easy adjustment if you wish. Will definitely make again and again. YUM...

Indian Saffron Rice

Delicious! This is the only rice I have ever had that I could eat just plain, it's so good...I think that sauteing the rice in the butter first is a key step, although we used a little less butter and like other reviewers, real saffron threads. We liked it even better than a saffron rice recipe we found in an authentic Indian cookbook! Yum.

Creamy Coconut Cake

I just made this for two different family Easter gatherings, and it was a hit. I followed other reviewers' advice and didn't poke the holes all the way down. Also, I couldn't find cream of coconut OR coconut cream in the can, so I used creamed coconut found in the grocery aisle where Thai food is sold. It is unsweetened, pure creamed coconut in a brick shape. I put almost the whole brick in a measuring cup and added warm water a little at a time, constantly mixing with a spoon until it was the creamy consistency in the video. I did add the condensed milk, and was hesitant given all the reviewers who said it was too sweet, but it was delicious! You don't need to add all the liquid if you don't want to; it will still be yummy! Will definitely make this again; thanks for all the helpful advice!

Baked Penne with Italian Sausage

This dish turned out really well. I made the following changes: I used red wine instead (didn't have white) and chicken/turkey sausage to cut down on the fat; I added some sliced mushrooms, 1 sliced zucchini, about 1/2 cup sliced fresh basil, minced garlic and various spices to the meat mixture (parsley, oregano, pepper, a few hot pepper flakes). I also used a mixture of grated gruyere, parmesan and friulan cheeses instead of the mozzarella (what we had in the fridge). Tasty, with a little bite. Even though I made changes, I was certainly inspired by your recipe. Thanks!
