Portobello Mushroom Stroganoff

Excellent easy meal with the added additions (soy, worcestire, garlic)..yumm! I also added 2 more varieties of mushrooms..didn't measure but added way more than the recipe called for. Will make again and again!

Artichoke Spinach Lasagna

I wasn't very thrilled with this recipe. I think that the broth soaks into the spinach and makes the flavor taste strange. The artichoke hearts were lost in there. Next time I will try it without any broth to get the artichoke and spinach flavors to come through.

Black Bean Hummus

I use this recipe often for parties and get-togethers and it is always a hit! I often add 1/2 to double the amount of beans to give it more texture and flavor. Yummy!

Spinach and Red Chard Quiche

Awesome! I love this recipe and so does everyone I have made it for..even hearty meat eaters. The only change I made was to add a 1/2 cup more parmesan. Yummy!

Quinoa and Black Beans

This recipe came out EXCELLENT! Very heartly yet not too heavy. I ommitted the corn and put in lots more fresh chopped cilantro. I will make this recipe again and again!

Bread Machine Challah II

Carrot Chile and Cilantro Soup

Insanely Easy Vegetarian Chili

It came out excellent, although I didn't follow the recipe step by step. Throw in more of what you like and less of what you don't. I added a bit more chile powder as well....yum yum! I will make this again!

Black Bean and Corn Salad I

Excellent! This salad is quick, easy to make and delicious! You can also omit the vinagrette and just use vinegar to omit the fat and oil. My family is hooked on this salad. We make it once a week!

Chickpea Curry

My whole family is hooked on this recipe! Wonderful and easy to make. I have also substituted and added other ingredients such as white beans, carrots, cauliflower and peas. The base is delicious and versatile!

Sesame Broccoli Salad

I love this dish! I recommend doubling all the ingredients besides the broccoli for more sesame flavor. don't be afraid to heap on the seeds, too! Excellent side dish!
