Oven BBQ Chicken Drumsticks

I made this tonight and it went over very well with my kids and husband. I didn't add the water and it didn't need it. I added 1tsp chili powder. Great recipe, will make again, thanks!

Roasted and Curried Butternut Squash Soup

This soup was delicious. I added about a 1-2" piece of ginger to the roasting veggies, used 5 cups of broth instead of 6 and used coconut milk instead of yogurt. Otherwise did everything as per the recipe. Delicious! The whole family loved it :)

Seafood Chowder

Excellent - delicious recipe. I actually had to make it dairy free for my daughter and used almond milk in place of regular, and a can of coconut milk instead of evaporated. Curry gives it suvh a nice flavour. I've made a couple times now (when canner lobsters are on sale) and will be making again tonight!

Chocolate Peanut Butter Pie II

Extremely easy! Husband and kids enjoyed a lot! I used a chocolate crust, natural peanut butter, 2 1/2 choc pudding cups because they were a little under 4oz each. Froze then topped with more whipped topping and shaved chocolate. Will make again.

Fluffy Pancakes

These were great - kids have told me always to make these from now on, not the ones I used to make! I used all purpose ww flour, buttermilk instead of milk/vinegar because I had it, and grape seed oil instead of melted butter. Nice and fluffy!

Roasted Chickpeas

These went over really well with my husband and son. I dry roasted the chick peas first, then mixed with oil and seasonings and finished roasting. Turned out beautifully and kept as long as they lasted, which wasn't long! Will make again and looking forward to playing with different seasonings!

Chicken with Cranberries

Delicious! Probably the fastest I've seen chicken disappear from my daughter's plate in a long time! Very easy and a nice change. Will make again for sure - may try and get the sauce to thicken up a bit more, but either way, yummy!

Almond-Crusted Tilapia

This is really good. I didn't use dusting flour, just dipped the fish in eggs and then in the mix of almond flour, grated Parmesan, lemon and garlic peppers and dried parsley. I then placed on foil-lined baking sheet sprayed with olive oil and misted the tops with the spray also and baked in the oven for a healthier option. I flipped over halfway through, didn't use extra Parmesan on top as I didn't feel it needed it. My kids loved it as much as we did. A definite keeper, thank you!

Fantastic Black Bean Chili

My 10yr old son said it's better than fantastic! Super easy to make and oh so yummy! I used 1.5 pounds ground turkey and added 1T cumin while browning it. I also took the suggestion to use a 28oz can of tomatoes. I've made this twice and it is healthy and fabulous with crusty bread. Leftovers are great, too!

Beef Barley Vegetable Soup

Love, love, love this soup! I've made this twice now. Cooked stewing beef in broth in crackpot on high 4-5 hrs then put in fridge overnight and skimmed fat in the morning. Sauteed onions and frozen veg (didn't use additional veggies beyond frozen pkg) and then added all the other ingredients and simmered for an hour or more. Awesome and so filling!! Looking forward to trying suggestion of putting everything in crackpot and cooking on low 10 hrs, too! Thanks for a great recipe!
