Red Lentil Curry
This recipe is delicious. However, I did make a few changes. I've made this dish about 5 times now. Initially, I found that the spices and the tomato puree were too pungent for me so I added half a can of coconut milk to tone down the spices and acidity from the tomatoes. I know coconut milk isn't traditionally used in Indian cuisine but I'm lactose-intolerant so I frequently use coconut milk as a substitute. I also added peas and garnished it with cilantro. I give it 5 STARS after my few changes.

The Best Thai Coconut Soup
This soup is excellent! I couldn't find the lemongrass or lemongrass paste in my grocery store so I had to omit it. However, the flavors were very authentic and comforting. I'm allergic to shrimp so I added cubed firm tofu instead. My 3 year old and 20 month old surprisingly loved it as well. I'm glad I found this recipe! I will definately be making this again!

Vegetarian Korma
This recipe was okay! I didn't have the cashews on hand so I'm not sure if that would have made a significant difference. I substitued the cream for coconut milk.
