Quick and Easy Oatmeal Muffins

Excellent recipe with changes. The cook time was too long and they were perfectly baked at 16 mins. I substituted applesauce for oil and it is much healthier. Enjoy!

To Die For Blueberry Muffins

Done at 20 mins. I used apple sauce instead of oil. Since people were saying the topping was too much I used the crumb topping off the Banana Crumb Muffin Recipe. 1/3 cup packed brown sugar, 2 tablespoons all-purpose flour, 1/8 teaspoon ground cinnamon, 1 tablespoon butter cut in. Excellent.

Black Bean and Corn Quesadillas

I used 11 oz of mexicorn instead of regular corn. The brown sugar blended nicely. I also used the red pepper flakes and it wasn't spicy. This was excellent.

Campbell's® Tuna Noodle Casserole

Amazing casserole. I did use frozen mixed veggies instead and it added some color. I kept the crumb topping the same. I used albacore tuna. I made the 4 serving version in an 8x8" square dish.

Apple Strudel Muffins

5 stars with changes. I doubled the amount of apples. I used 3 Gala apples and shredded 1.5 and chopped 1.5 apples. I used 1/2 cup white and 1/2 cup brown sugar. I softened the butter a little. Excellent.

BLT Wraps

I combined this recipe with one I found on Betty Crocker. My changes were to add 1/3 cup of mayo. I mixed together 2 cups of lettuce cut small, 1 tomato seeded and chopped, 1 cup of cheddar, 1/3 cup of mayo, and 8 slices of bacon in 1 inch pieces. I used a smaller size tortilla, but any size would work.

Deluxe Ham Casserole

I can't believe more people haven't tried this recipe - it's awesome! I followed the recipe exactly except I only used 2.8 oz of fried onions and found that to be plenty. I thought the peas went well in this dish. I did use the large elbow mac which made it more fancy and fun.

Spicy Black Bean Empanadas

I followed the recipe amount and it made 4 large square empanadas by cutting each sheet into 2 rectangles. I filled each with about a 1/2 cup of the bean mixture. Made a great dinner.

Sausage Balls

I made this twice. Once with the sausage right out of the fridge.....then I let the sausage sit for 30 mins and it made a huge difference. We preferred the batch that had the larger 2" size balls. Mine were done at exactly 20 mins using a thermometer to check. Using parchment paper is key to this recipe.

Baked Oatmeal I

5 stars. I've made other baked oatmeal and this one is the best. I did not think it was too sweet...just sweet enough for us. I did use 1/2 cup of applesauce instead of the oil.

Taco Soup II

Excellent. I left out the salt and pepper and it was plenty seasoned. It made about 8 servings. I used spicy taco seasoning and it was perfect for our spicy taste. I topped it with cheddar cheese.

Mediterranean Puff Pastry Chicken

Believe the hype, this is 5 stars! I used 4 thin sliced chicken breasts and 2 puff pastry sheets cut vertically. I pressed the sheets out a little bit to make it easier to seal. I sealed them into a square shape and pressed the edged with a fork. This made 4 square pockets. I used plain feta and it tasted great without any added italian spices. I did marinate the chicken, but I used 1 TBS of chopped garlic...and felt that was plenty! I put 1 heaping teaspoon of basil pesto on each piece of chicken. It was done at 35 mins, but felt I could have taken it out a little sooner. Check the internal temperature at about 30 mins. The moistness was awesome...so I think it was worth marinating.

Awesome! I forgot to add the butter and they were still perfectly moist!, so I imagine you could easily sub applesauce for the butter. Just a perfect combo of fruit and health. I liked how easy these were to prepare too.

Believe the hype, these are awesome. I made a 4 serving half batch...but, used 4 tortillas with approximately 1/2 cup filling in each. I baked it in an 8x8" dish. Was more than enough for 2 people. I also used hot/spicy taco seasoning and it added more flavor and was not too spicy.
