White Chicken Enchilada Slow-Cooker Casserole

So I did a couple things differently. See I made a quite similar casserole in the oven using tortilla chips instead of flour tortillas, adding a packet of taco seasoning to the sour cream/cream of chicken/green chili mixture. I did layer the mixtures w/ chicken and cheese between tortillas and top w/ green onions, I thought I had a can of black olives but I didn't, I love black olives, so I am sad I didn't have them, but I loved this recipe. I live along and cook for 1, and I ate on this for days, almost finished it myself. As far as the oven version of this, if you're interested in making it, use the same ingredients, layer the chips on the bottom, then spread the soup mixture on top, I like to chunk up some velveta on top of that, cover w/ a thinner (than the bottom) layer of chips and then top w/ lots of shredded cheese. Bake at 350 for about 20 minutes until the peaked areas are browning and it's bubbly, and you're good to go.

Olive Salad for Muffalettas

So I JUST made a Muffaletta tonight just so I could make this olive salad. I've always been a fan of muffalettas, but when my parents have made them, they've always been a little plain, so that's why we dip ours in italian dressing. I wanted to make the sandwich better and less boring, so I made this salad. I have to admit, I was very nervous about it. While the pictures looked really good, I feared that the vinegar and the red onion would over power the flavor. But I took a risk, and kind of a big one and I made the salad, and I put a large amount on my sandwich, baked the sandwich. Took my first bite and WOW. So amazing. Definitely reminds me of my mom taking me to Jason's Deli. This was easy, and quick. I had to make mine in my blender, so mine's a little more liquidy than it probably would've been w/ a food processor, but that's okay, it's still delicious. I've already recommended it to my mom.

Cheesy Sausage Zucchini Casserole

The flavor is GREAT. But I really wish there was some creaminess to it. Something binding it all together better. Any suggestions?

Broccoli Rice Casserole

Nothing against this particular recipe itself, I think my oven just HATE broccoli rice casserole. The last 2 times I've made it 2 different ways and it still ended up bland and too runny. Last time I also had a can of cream of mushroom, this time I only had the cream of chicken, I even left out the milk and it still ended badly. Maybe I'll try again when I live somewhere else w/ a different oven. I had even more than doubled the bake time. It just burned the edges and bottom. Never thickened the ingredients.

Feta and Olive Meatballs

These are some of the best meatballs I've ever had in my life, I'm not even really much of a fan of a hunk of beef(never been a heavy beef person though), but wow. I used Tomato & Basil Feta, a small can of chopped black olives, the onions of course, I used some fresh parsely and basil from my "garden"(4 flower pots on the front porch of my apartment). I also used a premade; McCormick I think, Italian Meatball seasoning envelope, some extra dried oregano and basil, and then I tossed in some bread crumbs, I did use 2 eggs. I don't have a broiler on my oven so I set my oven to 300 and baked the meatballs for 10 minutes, took them out, flipped them, baked them 15 minutes, took them out, checked them, then baked them another 10 minutes, so 35 minutes total, and they came out great. I put them over some wheat shells and covered it all w/ alfredo sauce, AMAZING. One of the best dinners I've had in a long time. I'd HIGHLY recommend these, I think I may even make them for Thanksgiving as an appetizer!

Slow Cooker Corn Chowder

Maybe I'm an idiot, but I've made this recipe twice and failed both times! The first time was my fault, I didn't read the directions carefully enough and added the evaporated milk at the beginning. But the second time I followed it perfectly and it tasted really watered down. Well it really had no flavor. I'm not giving this a third try. I'll just try a different recipe next time.

Caitlin's Mexican Rice

This recipe wasn't bad by any means, but I made my own version, which needs to be altered, I cooked a boil-in-bag rice bag, once it was done, I put it in a bowl w/ the black olives, chilies, and added a can of medium red enchilada sauce. Mixed that together, then poured it into the casserole dish and covered w/ cheese and baked 20-25 minutes. After tasting I really should've cut the chilies in half, you could hardly taste the awesome flavor of the enchilada sauce. My friends that ate it loved it, they agreed that had I not added the enchilada sauce it really woul've been missing something. One friend also suggested halving the amount of chilies and chopping up the olives better rather than just putting them in as is from the can.

Slow Cooker Macaroni and Cheese II

I really hate giving something a bad review, but I was just so disappointed. I read all the bad reviews but I kept myself hopeful that mine would turn out well like some reviews, but it turned out terrible. I was fine with it looking bad and having that weird texture like so many people talked about, but what did me in for giving it a bad review was that it had next to zero flavor to it. If it looked good and had no flavor, or looked bad and had tons of flavor, I would be willing to try it again w/ some editing, but I think I'll find a different recipe for mac and cheese.

Donna's Cheesy Quiche

I read how one lady didn't like quiche until she smelled this one. I actually didn't like the smell. I was tempted not to eat it. But I'm so glad I did. It wasn't the prettiest nor did it smell amazing, but the taste was awesome. And it was so easy. When I think of quiche I expect it to be hard, but you just mix everything together and bake. I didn't saute the onions, it doesn't matter to me if they're raw or cooked, and I just loved this recipe. This is definetly going in my recipe book!

Slow Cooker Chicken Alfredo

I made this for my first crock pot meal, and it's awesome. I'm eating it now. I put the sauce and chicken on a little after noon, let it cook until like 4, then put in the extra cheeses, then I boiled the noodles for 5 minutes, drained them, added them to the sauce for 10 minutes, then ate it. Turned out great. I will definetly make this again. Oh but you do have to stir every 30-60 minutes.

Mexican Casserole

I really liked this dish, even w/ some mistakes on my part. I missread and put tortilla chips and cheese on bottom as well as on top, so next time I won't use the chips on bottom, and I also didn't have any salsa, which I think those two things lead to my casserole being a little dry.

Corn Casserole I

I made this last night, and I enjoyed it, even w/ the sour cream, which initially made me very skeptical that the sour cream would screw it all up. But it didn't. I would've like to have tastes more of the cream style corn though, so I think next time I will only do 1/2 can of whole kernel corn. and maybe another 1/2 can of cream style. I'm going to play w/ the recipe and make it suit my likings, but in general this recipe was great, so easy to follow! Just to note, I'm allergic to iodine, and used the "no salt added" corns, and I couldn't taste a difference from regular corn w/ salt added.

Pepperoni Casserole

Personally I just wasn't in love w/ this recipe. It wasn't bad, it just wasn't anything special. I had never cooked Italian sausage before, so mine was a little undercooked. Plus I'm not a big fan of sausage in general. I also didn't feel like it had enough flavor. I used ricotta instead of cream cheese I believe it was. I may make it again, but I would suggest using some italian seasoning next time.
