White Chicken Enchilada Slow-Cooker Casserole
So I did a couple things differently. See I made a quite similar casserole in the oven using tortilla chips instead of flour tortillas, adding a packet of taco seasoning to the sour cream/cream of chicken/green chili mixture. I did layer the mixtures w/ chicken and cheese between tortillas and top w/ green onions, I thought I had a can of black olives but I didn't, I love black olives, so I am sad I didn't have them, but I loved this recipe. I live along and cook for 1, and I ate on this for days, almost finished it myself. As far as the oven version of this, if you're interested in making it, use the same ingredients, layer the chips on the bottom, then spread the soup mixture on top, I like to chunk up some velveta on top of that, cover w/ a thinner (than the bottom) layer of chips and then top w/ lots of shredded cheese. Bake at 350 for about 20 minutes until the peaked areas are browning and it's bubbly, and you're good to go.

Olive Salad for Muffalettas
So I JUST made a Muffaletta tonight just so I could make this olive salad. I've always been a fan of muffalettas, but when my parents have made them, they've always been a little plain, so that's why we dip ours in italian dressing. I wanted to make the sandwich better and less boring, so I made this salad. I have to admit, I was very nervous about it. While the pictures looked really good, I feared that the vinegar and the red onion would over power the flavor. But I took a risk, and kind of a big one and I made the salad, and I put a large amount on my sandwich, baked the sandwich. Took my first bite and WOW. So amazing. Definitely reminds me of my mom taking me to Jason's Deli. This was easy, and quick. I had to make mine in my blender, so mine's a little more liquidy than it probably would've been w/ a food processor, but that's okay, it's still delicious. I've already recommended it to my mom.

Cheesy Sausage Zucchini Casserole
The flavor is GREAT. But I really wish there was some creaminess to it. Something binding it all together better. Any suggestions?
