Broiled Tilapia Parmesan

OMG this is wonderful. My new favorite recipe for Tilapia. I substitued 1 T. fresh basil for the dried, I added 1 T. fresh thyme, and I used Old Bay Seasoning for the onion pwd & celery salt. I sprinkled Old Bay on fillets before broiling and I did everything else the same way as printed. Great! Enjoy!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Loved this! I admit I was hesitant to add the cumin in this recipe so instead of adding the 1/2 tsp I just shook a little on it and then tasted. I really liked the flavor so I added the rest! This recipe is super fast. My husband thought it was a little bland so maybe a little more cumin next time.

Pizza Crust for Bread Machine

Very good. Will make again. Came out alittle sticky just dusted with a little more flour. I made this with 3 cups of flour for bread machine since I did not have the semolina flour. I will now go out and buy it and try it with the semolina and hopefully it will be even better!

Kettle Corn

Used homegrown popcorn, electric stove, 3/3 shake method, took off burner when popping slowed, removed lid, waited a bit until it quit popping, shook on a few shakes of salt, and poured into a couple bowls. Amazing, it was sooo very simple. No mess. No burnt sugar or popcorn. Easy cleanup. Would be fun to add food coloring to the sugar for special occassions or events.

White Chocolate Raspberry Cheesecake

This is excellent cheesecake! I made this for Christmas Eve dinner and my mom asked me to make it for her next birthday. I admit I picked this recipe based on the reviews because "white chocolate/raspberry" wouldn't be my first choice but boy this was really good! I will definitely make it again--it would be great for valentines day since you can easily make hearts on top with the raspberry drizzle. I used Oreos for base with 1 T. of sugar and 1/4 cup melted butter. Next time I will reduce butter, I had butter dripping out the bottom of the pan which smoked up the house! Also, it takes some time to strain the raspberry sauce. I found it goes faster if you keep stirring it rather than letting it sit. It was well worth the effort. Thanks for the recipe!

Traditional Mashed Potatoes

HOW TO MAKE PERFECT MASHED POTATOES...enter the amount of people you are serving (extra if you want leftovers), hit CALCULATE, follow the recipe exactly and you end up with the perfect mashed potatoes!!!! LOVE LOVE LOVE this simple recipe.

Cheesy Ranch Potato Bake

These are very good potatoes. I have made something similar in the past but without the chili pepper and it wasn't as good...so the secret ingredient must be the chili pepper! You can adjust the dressing and cheese to your liking.

Dill Pickle Meatloaf

Very good. The flavor reminded me a little of Iowa Maid-Rites! I followed recipe exactly and used Claussen dill pickles. I generally use crackers when I make meatloaf but I really didn't notice any difference with the slice of bread. I also bake my loaf without topping and add it during the last 15 minutes. This allows a crust to form on the top of the meatloaf. I prefer that method to this one. And like others, I will double the sauce next time and omit the water. The sauce is wonderful!

Tender Pork Spare Ribs

My husband rated these ribs as "the best he's ever eaten"!!! They were very tender. Loved the cooking method. I was a little leary of the flavor of the greasy juices but after boiling the sauce on Med-High heat until it reduced to a thick sauce it was very good. We did the last step on the grill. I wished the recipe stated how many lbs of ribs. I made 4 lbs of ribs and halved the brown sugar & fajita seasoning. (It seemed to be plenty to coat and marinated overnight. I used the full recipe for the sauce.)

Rosemary Ranch Chicken Kabobs

Ran out of ranch dressing but had a dry ranch mix which I used a couple tablespoons mixed with a 1/4 cup sourcream and 1/4 cup mayo, used 1/2 tsp. salt and 1 tsp sugar and followed the rest of the ingredients exactly. Very good and very tender. This makes a lot of marinade, it probably would work for 7 chicken breasts, I used 5. DH loved too.

Mexican Street Vendor Style Corn Salad

Garlic-Lemon Double Stuffed Chicken

Good. Did not have any Romano so I substitued some Italian shredded cheese. Juice of one lemon gave me 2 1/2 T. so I used it all since we love lemon butter! Very good recipe. Served with fetticini noodles, brocolli and lettuce salad.

Roast Sticky Chicken-Rotisserie Style

I will confess, I am bad at roasting anything. My chickens are always undercooked and my beef and pork are never perfect. This recipe was great I roasted both chickens; one for Sunday night dinner and the second for shredding for meals later in the week. They were very moist! My husband said that I should start roasting 2 chickens at a time from now on! LOL I only had time to marinate for 4 hours but very good. Great weekend chicken!

Big Soft Ginger Cookies

Amazingly good. I made these cookies along with another recipe for Chocolate chip cookies one weekend and these were gone first! For a soft cookie be careful not to flatten too much.
