Pennsylvania Coal Region Barbecue

This is a good quick bbq sandwich. I have been making this for years and I got the recipe from my great grandmother! the only difference our recipe adds 1/2 tsp of worchestershire.

Rosemary Ranch Chicken Kabobs

Ran out of ranch dressing but had a dry ranch mix which I used a couple tablespoons mixed with a 1/4 cup sourcream and 1/4 cup mayo, used 1/2 tsp. salt and 1 tsp sugar and followed the rest of the ingredients exactly. Very good and very tender. This makes a lot of marinade, it probably would work for 7 chicken breasts, I used 5. DH loved too.

The Best Potato Salad

I AGREE this is the best potato salad. I was out of prepared Ranch dressing but I had a powdered pkg of ranch and sprinkled in about 1 1/2 tsp and added 1/2 c sour cream to sub for it. I had blk olives to use up so I added them --very good. When i made this I couldn't find the recipe I was looking for so I settled for this one and I am so glad it did! This is my new favorite.

Garlic-Lemon Double Stuffed Chicken

Good. Did not have any Romano so I substitued some Italian shredded cheese. Juice of one lemon gave me 2 1/2 T. so I used it all since we love lemon butter! Very good recipe. Served with fetticini noodles, brocolli and lettuce salad.

Quick and Easy Pizza Crust

This is equally as good as the other high rated bread machine pizza crust on AR. And this is sooooo much faster! My first time trying this I had leftover alfredo sauce in frig so I used that as my sauce and topped it with Mozzeralla. I have been making homemade pizza for many years and this will be my "go to" recipe for pizza crust from now on. I agree with others, next time I will add a little garlic and onion powder to the mix for some added flavor but dough is sooo easy to work with, I won't change a thing other than that.

Roast Sticky Chicken-Rotisserie Style

I will confess, I am bad at roasting anything. My chickens are always undercooked and my beef and pork are never perfect. This recipe was great I roasted both chickens; one for Sunday night dinner and the second for shredding for meals later in the week. They were very moist! My husband said that I should start roasting 2 chickens at a time from now on! LOL I only had time to marinate for 4 hours but very good. Great weekend chicken!

Slow Cooker Stuffing

Very Good stuffing, however I ended up cooking in my oven rather than the slow cooker. I used a combination of bread cubes (day old, peppridge farms, & off brand of large dried cubes). I used all 4 cups of chicken broth and should have used more....i can see how the different type (size) of bread cubes used would determine how much chicken stock is needed. I omit the eggs, family perference. Looking forward to trying this in a crockpot.

Down Home Macaroni and Cheese

This hits the spot, and is easy. I added a dash of garlic salt, cayenne pepper and dry mustard while melting the cheese just for an extra little zip. Will use this recipe as my GO TO recipe for mac and cheese.

Parmesan Brussels Sprouts

Converted this to 6 servings and made it as a side dish for Thanksgiving. To save time I put it in oven at 350 degrees till tender. I left the garlic in large slices so it didn't burn and added the parm after Brussels sprouts were tender and stuck it back in oven for 5 to 10 minutes.

Apple Crisp II

This is an excellent recipe. I used 3/4 cup of white sugar with the apples and I did not add the water with the apples and it was just fine. It is wonderful served warm with ice cream or whipping cream and a big glass of milk!

Sun-dried Tomatoes I

It works! I have used quartered tomatoes and have tried cherry tomatoes cut in half. I had so many cherry tomatoes and I didn't want them to go to waste so I thought "why not"....much faster process and you can get more in the jar since they are so small. I made these last year too, packed them in a jar and added olive oil to cover. Ate them throughout the year.

Mrs Espy's Enchilada Sauce

We loved this and it was so easy. I froze the little bit we had leftover and used it again however the consistency and color were really unappealing after freezing. Next time I will make a little less sauce or make more enchiladas!

Ten Minute Enchilada Sauce

We loved this sauce. It was my first time making homemade. I used regular flour and just plain old chili powder. I can't wait to try the chili powder listed. We used this on a 9x13 pan of enchiladas with about a cup leftover to freeze.

Stephanie's Freezer Spaghetti Sauce

I would rate this as EXCEPTIONAL! I made this recipe this summer to use up all the tomatoes we had in our garden as well as the onion, green pepper, basil and parsley. I used my pyrex measuring cup and froze (28oz? same as jar of Prego) into gallon freezer bags. Laid them flat on cookie sheets to freeze and stacked them in the freezer. I am just getting around to reviewing this the following January and I love it more every time I use it. Thank you Stephanie!!

Sausage, Peppers, Onions, and Potato Bake

This is great! I used Johnsonville Italian Sausage. It makes for an easy meal and I served it with homemade bread. This would also be good for a brunch or breakfast with eggs. I added some fresh mushrooms that I needed to use up other than that I followed recipe exactly. YUM!

Shredded Beef Enchiladas

Made the meat the day before. Put meat in crockpot without water and without seasonings, flipped it after 45 minutes, cooked another 45 mins.drained juice and fat. Continued to cook in crockpot with seasonings and broth. Put in fridge, heated up next day and shredded big chunks by pulsing in food processor (I was in a hurry). Made sauce as directed (next time I will leave out the flour and add a jalapeno for extra zip). Used flour shell (did not fry). Spread a little leftover salsa on each and sprinkled cheese on top. Husband said these were the best enchiladas I have ever made. I agree! Will make again and again. Froze leftover meat.
