Mexican Street Vendor Style Corn Salad

This is sooooo good I made it two nights in a row! I used frozen corn (personal preference) however this recipe only served 3. Loved the lime juice. Will make again and again.

The Best Potato Salad

I AGREE this is the best potato salad. I was out of prepared Ranch dressing but I had a powdered pkg of ranch and sprinkled in about 1 1/2 tsp and added 1/2 c sour cream to sub for it. I had blk olives to use up so I added them --very good. When i made this I couldn't find the recipe I was looking for so I settled for this one and I am so glad it did! This is my new favorite.

Chicken Breasts in Caper Cream Sauce

4 stars for how it is written, 5 stars for my improvements....dredged in flour, salt and pepper, sauted in the butter, till browned. Removed from frying pan added 1/4 cup white wine to deglazed the pan, added double the cream, double the capers, dill, (I forgot the garlic), juice from 1/2 lemon (I do not care for lemon pepper) and fresh ground pepper. Poured sauce over chicken breast. Served with green beans and coucous! It was wonderful.

Oven-Roasted Turkey Breast

Tender Pork Spare Ribs

My husband rated these ribs as "the best he's ever eaten"!!! They were very tender. Loved the cooking method. I was a little leary of the flavor of the greasy juices but after boiling the sauce on Med-High heat until it reduced to a thick sauce it was very good. We did the last step on the grill. I wished the recipe stated how many lbs of ribs. I made 4 lbs of ribs and halved the brown sugar & fajita seasoning. (It seemed to be plenty to coat and marinated overnight. I used the full recipe for the sauce.)

Brazilian White Rice

This is one of those recipes where I think "why didn't I think of that"! It brings a lot of flavor to plain white rice. I will make white rice this way from now on!! It is not stated in the recipe but it is important to bring water to a boil before covering and turning down to a simmer. The leftovers will make great fried rice!!!

Simple Scones

This is a very good, simple recipe. I followed recipe and baking instructions except I used dried cranberries and white chocolate chips. I put dry ingredients in food processor pulsed added slices of frozen butter and pulsed until mixture was in small chunks. It is IMPORTANT not to over mix! Then I dumped mixture out onto a large sheet of plastic wrap. I used the wrap to form dough into a round circle about 3/4" thick and cut into 8 wedges. I placed the wedges on a silpat on baking sheet and sprinkled with the sugar. No flour mess to clean up. I am looking forward to making these many more times!

Baked Omelet

Rating this as a great base recipe! This served 4 for our family (which included 2 college-age males). For the first half of baking time I placed it on the top shelf and then moved to bottom shelf for remaining half. I sauted onions and green pepper, added bacon and used 1/2 tsp of cajun seasoning and cheddar cheese.

Quinoa Side Dish

It was my first time trying Quinoa. I used Red Mill Quinoa so I did not rinse it. I thought it sounded strange to add the ingredients at the end after cooking the quinoa so I sauted the onion and 2 cloves of garlic before browning the quinoa. When it was simmering I tossed in the salt & thyme. Only when it was finished did I add the parsley and a quick squeeze of lemon. (I used Turkey broth leftover from Thanksgiving). My result was a very bland quinoa.....maybe throwing in uncooked onions and garlic as recipe states would have helped with favor? However I cannot imagine eating it with raw onions and garlic. I will not make this again, however I will continue to experiment with quinoa.

These are good if you are looking for a cookie that is not real sweet. Easy to make. Followed recipe exactly, if I were to make it again I would use sweeter chocolate.

Leslie's Broccoli, Wild Rice, and Mushroom Stuffing

This was very good. I only had a 6oz box of stuffing so I chopped up a leftover half loaf of french bread, added a tsp or so of sage and sauteed some celery along with the onion and mushrooms. I browned some chicken breast in the same pan after sauteeing the vegetables and placed those in the 9X13 and topped with stuffing. Great comfort food on a cold and rainy night.

Chipotle Crusted Pork Tenderloin

This is great with only 1 T. of chipotle chile pwd. The end slices are very spicy so watch out! I baked at 350 degrees until meat thermo reached 150 degrees around 40 minutes. Cannot wait until grilling weather to try it on the grill! Very tender. I did not reduce the sugar.

Slow Cooker Pheasant with Mushrooms and Olives

I put this in the slow cooker for my husband while I spent the day with a girlfriend shopping so I did not taste it myself however my husband who is a bird hunter and who has eaten game his entire life said this was very good, moist and didn't taste gamey. After years of cooking "dried out" pheasant I have finally found a recipe that is GOOD!!!!!!! (I substituted wild mushrooms that I had on hand )

Beef and Noodles

This was really good, I had some leftover peas and a sirloin steak in the refrig so I whipped this up for dinner. I didn't have any beef stock so I subbed a beef bouillon cube and cup of water but it was still very good. I used fresh thyme from the garden and I made homemade egg noodles from this site. I will definitely make this meal again. (After this simmered for an hour plus, there was very little liquid left, next time I make this I will add another cup. A little red wine, garlic and mushrooms would be nice additions too.)

Sun-dried Tomatoes I

It works! I have used quartered tomatoes and have tried cherry tomatoes cut in half. I had so many cherry tomatoes and I didn't want them to go to waste so I thought "why not"....much faster process and you can get more in the jar since they are so small. I made these last year too, packed them in a jar and added olive oil to cover. Ate them throughout the year.
