Hummus III

This is a great basic hummus recipe. I was glad I read the first review before preparing ....it calls for 2 cups of beans not two cans! This makes about 1 1/2 cups. I do not get the people who wish to make 1/2 a recipe, bc I eat that much by myself LOL! Once you buy the tahini paste (i found in the health food section and it keeps for a long time in the frig) it is such a quick and easy recipe to whip up time and time again. I like that you can add extras to your liking...cumin, red pepper flakes, roasted red peppers. I am looking forward to trying black olives too like the store bought. AND ITS A HEALTHY SNACK!

Roast Sticky Chicken-Rotisserie Style

I will confess, I am bad at roasting anything. My chickens are always undercooked and my beef and pork are never perfect. This recipe was great I roasted both chickens; one for Sunday night dinner and the second for shredding for meals later in the week. They were very moist! My husband said that I should start roasting 2 chickens at a time from now on! LOL I only had time to marinate for 4 hours but very good. Great weekend chicken!

Ground Venison Burgers

Soft Christmas Cookies

Very easy dough to work with. I used less flour when preparing dough and added the extra when rolling it out. I made dough a couple days in advance and kept in refrig, it worked great. Be careful not to roll too thin unless you like crispy cookies.

Quinoa Side Dish

It was my first time trying Quinoa. I used Red Mill Quinoa so I did not rinse it. I thought it sounded strange to add the ingredients at the end after cooking the quinoa so I sauted the onion and 2 cloves of garlic before browning the quinoa. When it was simmering I tossed in the salt & thyme. Only when it was finished did I add the parsley and a quick squeeze of lemon. (I used Turkey broth leftover from Thanksgiving). My result was a very bland quinoa.....maybe throwing in uncooked onions and garlic as recipe states would have helped with favor? However I cannot imagine eating it with raw onions and garlic. I will not make this again, however I will continue to experiment with quinoa.

Slow-Cooked Corn Chowder

Very easy and fast to prepare. After gathering all of the ingredients I realized I was out of corn so I substituted carrot, broccolli, cauliflower medley. I also added an extra cup of potatoes to thicken. I was surprised at how good this turned out....I was leary of the milk boiling and separating but the potatoes seem to help keep it creamy. I am looking forward to trying it with corn! LOL

Slow Cooker Stuffing

Very Good stuffing, however I ended up cooking in my oven rather than the slow cooker. I used a combination of bread cubes (day old, peppridge farms, & off brand of large dried cubes). I used all 4 cups of chicken broth and should have used more....i can see how the different type (size) of bread cubes used would determine how much chicken stock is needed. I omit the eggs, family perference. Looking forward to trying this in a crockpot.

Traditional Mashed Potatoes

HOW TO MAKE PERFECT MASHED POTATOES...enter the amount of people you are serving (extra if you want leftovers), hit CALCULATE, follow the recipe exactly and you end up with the perfect mashed potatoes!!!! LOVE LOVE LOVE this simple recipe.

Slow Cooker Chicken Taco Soup

I used the homemade taco seasoning as suggested by recipe author however, I found this too spicey for my taste (and I like spicey) maybe I did something wrong. I only used one can of black beans and did not add chili beans.

Slow Cooker Pheasant with Mushrooms and Olives

I put this in the slow cooker for my husband while I spent the day with a girlfriend shopping so I did not taste it myself however my husband who is a bird hunter and who has eaten game his entire life said this was very good, moist and didn't taste gamey. After years of cooking "dried out" pheasant I have finally found a recipe that is GOOD!!!!!!! (I substituted wild mushrooms that I had on hand )

Down Home Macaroni and Cheese

This hits the spot, and is easy. I added a dash of garlic salt, cayenne pepper and dry mustard while melting the cheese just for an extra little zip. Will use this recipe as my GO TO recipe for mac and cheese.

Carrot Rice

Very good. Strong peanut flavor. Followed recipe exactly...too much water for the rice. I would recommend following the directions on the rice pkg (which in my case it should have been 1 3/4cup of water rather than 2 cups). I agree with others that it seems to be missing something. But would be good with a spicy pork or chicken.

Shrimp Lemon Pepper Linguini

I rated this 5 stars only because i messed up and didn't like lowering the rating, I listened to some of the others suggestions to double the sauce and what a mistake, it was soup! It would be much better as it is written. My husband liked it ...he thought the lemon flavor was just right.

These are very good potatoes. I have made something similar in the past but without the chili pepper and it wasn't as good...so the secret ingredient must be the chili pepper! You can adjust the dressing and cheese to your liking.
