Super Easy Spinach and Red Pepper Salad

Macaroni and Cheese Salad

Good but too bland for me. I followed recipe exactly and was excited to find another use for my Beau Monde seasoning but if I were to make it again I would find something to spice it up a bit!

Angela's Awesome Enchiladas

Very good and very filling. I shredded 4 leg-thigh pieces I had slow cooked in crockpot. I skipped the butter and chopped onions step and just added more onion powder because of time. I do not care for canned enchilada sauce so we subbed salsa verde. This made 8 nice size enchiladas to fill a 9x13 pyrex. Can't wait to try it with the onions!

Best Brownies

5 stars for the brownies and 3 stars for the frosting. I took these brownies to a family potluck today and they received rave reviews! To make the frosting work, I only used 1/2 cup of the powdered sugar and added a Tablespoon or two of milk to thin it. It spreads to a thin glaze when you frost brownies right out of the oven. And they cut perfectly as mentioned in other reviews after they cool!

Leslie's Broccoli, Wild Rice, and Mushroom Stuffing

This was very good. I only had a 6oz box of stuffing so I chopped up a leftover half loaf of french bread, added a tsp or so of sage and sauteed some celery along with the onion and mushrooms. I browned some chicken breast in the same pan after sauteeing the vegetables and placed those in the 9X13 and topped with stuffing. Great comfort food on a cold and rainy night.

Beef Noodle Casserole

Good "go to" recipe when you need to feed the family. I used frozen corn rather than creamed corn, roasted red peppers rather than pimentos, and I used macaroni noodles rather than egg noodles but it was easy and very good.

Brownies with Peanut Butter Fudge Frosting

These were good. I read reviews and added a little peanut butter to the frosting I WISH I WOULD HAVE FOLLOWED THE RECIPE. It just wasn't that sweet w/ the added peanut butter.

Venison Meatballs

Very good and I will make again! No instant rice so I used panko crumbs like others did. I also used some homemade tomato sauce in place of the soup. The ground mustard and paprika make the sauce different but very good. UPDATE: I have made this several times now using the tomato soup and it is a very good recipe. I am very picky when it comes to ground venison. This recipe is a winner and so easy!

Broccoli Cheese Soup

I was looking for a recipe to use up some leftover mashed potatoes and broccoli so I used this. So I substituted my leftovers and a handful of baby carrots that I shredded in the food processor for the bag of broccoli. I used my emulsion blender to make it smooth, mixed cornstarch with a cup of the soup rather than water. It was excellent, the best soup I ever made!!!!

Ham Fried Rice

This was really good. I have never had "ham" fried rice because it didn't sound good to me. But I had all the ingredients on hand so I thought I would give it a try. I made recipe for 6 and followed redipe exactly.

Chocolate Chip Cheese Ball

I wanted to like this more based on all of the good reviews but it was just average for me. I came home from party with 1/2 of it left. Its missing something, I won't make again. I served it with graham crackers and chocolate wafers.

Husband-Friendly Chicken Pizza

I was looking for a recipe to use up some gorgonzola cheese so I tried this. I prepared my own crust and did not have any jalepenos otherwise I would have added it and it might have been better. I thought this was average. I will not make again. My husband didn't care for it but my son liked it.

Homemade Laundry Soap

I have been using this soap for several months now and I LOVE LOVE LOVE IT! I have used the Zote once and the Fels Napa 4 times. I find that the Zote creates much more dust than the Fels Napa so I prefer the Fels napa. I can purchase all of the ingredients at my local Walmart which is ideal for me. I was strictly a Tide user and I am no more which saves me about $30 to $40 per month. If you want more instructions or photos Baking Nana has a blog with more details. Thanks Baking Nana

Brazilian White Rice

This is one of those recipes where I think "why didn't I think of that"! It brings a lot of flavor to plain white rice. I will make white rice this way from now on!! It is not stated in the recipe but it is important to bring water to a boil before covering and turning down to a simmer. The leftovers will make great fried rice!!!

Simple Scones

This is a very good, simple recipe. I followed recipe and baking instructions except I used dried cranberries and white chocolate chips. I put dry ingredients in food processor pulsed added slices of frozen butter and pulsed until mixture was in small chunks. It is IMPORTANT not to over mix! Then I dumped mixture out onto a large sheet of plastic wrap. I used the wrap to form dough into a round circle about 3/4" thick and cut into 8 wedges. I placed the wedges on a silpat on baking sheet and sprinkled with the sugar. No flour mess to clean up. I am looking forward to making these many more times!
