Shredded Beef Enchiladas

Made the meat the day before. Put meat in crockpot without water and without seasonings, flipped it after 45 minutes, cooked another 45 mins.drained juice and fat. Continued to cook in crockpot with seasonings and broth. Put in fridge, heated up next day and shredded big chunks by pulsing in food processor (I was in a hurry). Made sauce as directed (next time I will leave out the flour and add a jalapeno for extra zip). Used flour shell (did not fry). Spread a little leftover salsa on each and sprinkled cheese on top. Husband said these were the best enchiladas I have ever made. I agree! Will make again and again. Froze leftover meat.

Marinated Grilled Shrimp

This is the best grilled shrimp I have ever made. Fresh basil is a must. I used uncooked frozen shrimp thawed, large fresh peeled shrimp would make it to die for! Cannot wait to make it again!

Swiss Chicken Casserole II

Easy Chocolate Bundt Cake Glaze

Super easy and fast. I will definitely use this recipe if ever out of powdered sugar and need frosting. Great substitute, however I still prefer the taste of real frosting.

Ann's Rice Pilaf

Made this recipe for 6 servings and it turned out great. I served this with fish so I switched the Greek seasoning to Old Bay as suggested by the recipe submitter. Love that you can change the seasoning based on what type of meat it will be served along side. I have made other recipes similar to this and they have lacked flavor; this one is now my favorite!

Baked Rigatoni with Italian Sausage and Fennel

This was great and a little different from the usual! Better than the other baked ziti recipes I have tried. I followed recipe exactly except I used my own homemade sauce--Stephanie's Freezer Spaghetti Sauce. I especially liked the fresh fennel and roasted red peppers! I will definitely make again.

Stephanie's Freezer Spaghetti Sauce

I would rate this as EXCEPTIONAL! I made this recipe this summer to use up all the tomatoes we had in our garden as well as the onion, green pepper, basil and parsley. I used my pyrex measuring cup and froze (28oz? same as jar of Prego) into gallon freezer bags. Laid them flat on cookie sheets to freeze and stacked them in the freezer. I am just getting around to reviewing this the following January and I love it more every time I use it. Thank you Stephanie!!

White Chocolate Raspberry Cheesecake

This is excellent cheesecake! I made this for Christmas Eve dinner and my mom asked me to make it for her next birthday. I admit I picked this recipe based on the reviews because "white chocolate/raspberry" wouldn't be my first choice but boy this was really good! I will definitely make it again--it would be great for valentines day since you can easily make hearts on top with the raspberry drizzle. I used Oreos for base with 1 T. of sugar and 1/4 cup melted butter. Next time I will reduce butter, I had butter dripping out the bottom of the pan which smoked up the house! Also, it takes some time to strain the raspberry sauce. I found it goes faster if you keep stirring it rather than letting it sit. It was well worth the effort. Thanks for the recipe!

Amazingly good. I made these cookies along with another recipe for Chocolate chip cookies one weekend and these were gone first! For a soft cookie be careful not to flatten too much.

Mexican Rice II

This is my go-to recipe for Mexican Rice. Sometimes I use salsa in place of the tomato sauce if I'm out. Today I made the Simple Carnitas and used the leftover pork broth in place of the chicken broth and it was excellent too!

Simple Carnitas

I love carnitas and these were very good. I did not have any oranges so I used 4 T. orange juice concentrate (I doubled the recipe because I had a 7 lb. roast) & I cooked it in the crockpot with very little water added. After it was done, I strained the juice from the meat and let it set overnight and skimmed the grease from the top. I used the broth to make the Mexican Rice II as someone else suggested (which was also very good). I sauted a quartered onion and some halved jalapeno's in some oil and served it along side rice, pork, refried black beans and flour shells. This is one of my favorite ways to cook pork because the meat can be used in so many ways...BBQ pork sandwiches, burritos, tacos etc.

Thai Quivering Tenderloins

I was short on time to marinate, so I cut the tenderloin into thick chops and marinated for 2 to 3 hours before grilling. I was short 1 T. of soy sauce and cilantro however it was still very good. Bring sauce to a low boil to thicken. We had very little of the sauce leftover. Looking forward to trying it with chicken breasts too. Thanks!

Apple Crisp II

This is an excellent recipe. I used 3/4 cup of white sugar with the apples and I did not add the water with the apples and it was just fine. It is wonderful served warm with ice cream or whipping cream and a big glass of milk!

Watermelon Sherbet

My husband was given a watermelon however we have no watermelon lovers in our family so it sat on the counter for a few days before I thought...what could I make with it that they might like, so I tried this! I mixed it all together with an emulsion blender & I did not have an ice cream maker so I put in a metal bowl (like another reviewer) and stirred it once before going to bed. This afternoon I pulled it out to try not expecting much since I didn't have an ice cream maker and I'm not much of a watermelon lover but OMG this is really good!!! Better than sherbert!

Five Minute Ice Cream

My daughter had a friend spend the night last night and I made this ice cream for them. They loved it & so did my husband and I! It makes four small dishes. It was a bit gritty (sugar) but oh so good! I think the next time I might try reducing the sugar a bit.
