Single Crust Peach Pie

In spite of my better judgement, I did not add cornstarch to thicken the peaches, which should be listed as part of this recipe. It was a runny mess. Also was too sweet for my taste. Would recommend less white sugar, maybe some brown, and cinnamon instead of nutmeg. Better yet, use another recipe. I'm an experienced cook and have used other pie recipes before, but will not waste good fruit on this one again.

Best Ever Chocolate Chip Cookies II

These were okay, but I do prefer my cookies with less grease and more taste. Also not as soft as I prefer. I've thrown everything but the kitchen sink in mine, using a different recipe. Suggest: raisins or other dried fruits, nuts, coconut flakes, and lots of chocolate...chips or chunks.

Cinnamon Spiced Coffee

This was okay, but don't know what all the noise is about. I've been doctoring my coffee cup with these type of ingredients for years. Other ideas: you can buy hazelnut and other flavored syrups at the grocery store in the coffee section. Also try: pumpkin pie or nutmeg spices, chocolate powder. Sugar to taste. Save yourself some $$ and do it yourself.

Taco Lasagna

This is a very tasty, kid-friendly recipe. Added jalapenos, sliced black olives, diced tomatoes, more garlic. Used low fat cheeses and sour cream. Plated this with shredded lettuce. Wonderful!

Banana Crumb Muffins

These are great and very kid-friendly. I've subbed half whole wheat flour at one time, only used two bananas, etc., and they're still wonderful. It's defininetly the topping...and all that sugar. Worth it? Yes.

Chantal's New York Cheesecake

This is the best...Only change would be to add a pan of water under the cake when it's baking, which is an old rule when baking cheesecakes. Also, is a great way to use some of the seasonal fruits that are so bountiful and inexpensive. Enjoy!

Lemon Blueberry Bread

With a few changes, this bread is wonderful!! I used a little over 1 T. (3 lemons) zest and it came out just fine. I also put some milk, lemon juice, 2 T. butter (no dieting here!), and powdered sugar together for topping. This was put on just after coming out of oven, in pans. The bread soaks it in and helps loosen up any pan sticking. This will be made again!

Green Bean and Feta Salad

This is a great way to use those in-season or garden beans. Like many, I cut the dressing in half,except for the sugar. Makes a large amount, great for picnics. Kids even enjoyed this. Will make again, only half for us at home.

Spicy Bean Salsa

This recipe is wonderful! I used fresh ingred., except for beans and corn. Also used quarter bunch chopped cilantro and several cloves finely chopped garlic. Didn't have time to overnite it, but was excellent with many requests for the recipe. Thank you, Susan!
