Jalapeno Poppers I
Panko bread crumbs! Wow, this was great. I followed the directions except that I added some Weber "Kickin' Chicken" seasoning to the cheese. Also, because I have the patience of a lightning bolt, I just couldn't do the rolling around in the eggs and stuff. I used a tablespoon and spooned the egg/milk mixture over the top of the peppers after they were stuffed, one at a time, and then spooned panko bread crumbs over them, nice, quick and easy. Man, they were the bomb! Thanks!

Sam's Famous Carrot Cake
Excellent! I don't even like sweets that much. I did have to take it out of the oven after 40 minutes but I baked it in 8 inch pans. It was wonderfully moist and not too sweet. P.S. I didn't have any raisins or coconut and it was still the best carrot cake that ever came outta my oven.

Chicken Pot Pie I
This was great! Even though I consider myself a good cook, I, too, always keep a few cans of soup (cream of celery, chicken) on hand for just this kinda thing, to whip something up, especially leftovers, in a hurry, throw it in the oven and forget about it. Great way to use leftover potatoes, carrots, just about anything. The only thing I changed was to add a lot more seasoning cuz I luv it!
