Fried Cabbage II
Really terrific! Nutritionists tell us we're supposed to eat at least 3 servings of cruciferous vegetables a week [broccoli, brussels sprouts, cabbage] ... and, this one is very simple and downright delicious. I served it with bratwurst -- it was a HIT! For leftovers, mix the cabbage with leftover mashed potatoes, reheat and serve with corned beef! AMAZING!

Grandma's Corn Pudding
A good basic recipe for an Old Classic. However, I added 1/4 cup instant corn grits, 1 tsp salt and reduced the eggs to 3, and reduced the sugar to 3 Tablespoons [corn is already pretty sweet -- you want this to be a Side Dish, not a Dessert] -- now, THAT tastes like true Southern "corn puddin'"!

Colonel Jackson's Smothered Chicken
Try substituing 1 cup low-sodium chicken broth for the vinegar for a "truly southern" version of this classic. Also substitute vidalia onion for red onion.
