Pumpkin Pancakes
If you love pumpkin and pancakes go home and make these immediately! I used pumpkin that I roasted and pureed myself. They were amazing and I made them exactly as the recipe states. I didn't, nor would I, change a thing. My husband who isn't exactly a big pumpkin fan made himself an omelet for breakfast and after having a bite of my pancake he ended up having two pancakes with his omelet! They are honestly that good. Enjoy!

One Bowl Chocolate Cake III
This cake is delicious! I did as suggested by other reviewers and upped the cocoa powder to 1 cup. I also used an espresso and then boiling water for the rest of the one cup boiling water in the instructions. I used gharadelli cocoa powder. I was a little thrown by how runny the batter was but wasn't nervous about it because all the other reviews said that was how it was supposed to be. I baked it in a bundt pan for 45 minutes and when it was cooled I sprinkled confectionary sugar on top. So good it didn't even need frosting! It was the perfect end to dinner with a nice espresso. Definitely staying in my recipe rotation for when I am having a chocolate craving! Thank you!!

Chef John's Salmon in Parchment
This recipe was easy and fantastic! This is only the second time I've ever cooked salmon and I was nervous because the first time I grilled it and it was horrible. I did not add the asparagus or potatoes so I cannot speak to the veggies but I followed all the directions for cooking the fish in the parchment with the exception of adding dill to the salt and pepper just because I really like dill. The fish was cooked perfectly and tasted amazing cooked this way. I never thought I'd eat salmon and enjoy it! Know I know I have what it takes! Thanks, Chef John!
