Coconut Tilapia with Apricot Dipping Sauce

Very different tastes! I never would have imagined this to be a good combination, but it is! I think it would be even better had I had the right ingredients for the dipping sauce, and maybe chopping the coconut would have more of a breading effect than simply leaving them in shreds. It had a sweet yet spicy taste to it.

Oatmeal Chocolate Coconut Chewy

Our oven acts up at times, but even though one batch of cookies was slightly overcooked, they still managed to be chewy! This is a great recipe for fast, easy, and delicious cookies. I only used two cups of oats since the dough didn't seem able to encompass all of oats, chocolate chips, and coconut. It's a great combination of flavors. Highly recommended!

White Chocolate Orange Cookies

Who would have thought that orange and white chocolate would be such a good combination? This recipe delivered scrumptious cookies to the table. I received praise from all around for them. The orange taste/flavor was apparently just enough to be enjoyable and not overwhelming. Since I'm not a fan of nuts, I omitted that, which turned out to be a good thing since the amount of white chocolate chips was excessive already. Using less would be perfectly fine, especially for those who don't need that much sweetness. Perhaps cutting back on the butter would also be good since the dough was excessively greasy. Overall, this was a very simple recipe that yielded a delectable treat!

Key Lime Pie I

I'm usually not a fan of lemon or lime flavored thing, but this pie was very good! Waiting for it to freeze is crucial for the consistency to be right. We used cool whip instead of heavy whipping cream for the decorative topping, and it worked out just fine, probably even easier to do. This pie is a perfect summer treat.

Vegetarian Lime Orzo

Unexpectedly delicious! I'm a devoted meat-eater, but this meal left me full and satisfied. The flavors mixed very well together. The only thing is that instead of stewed tomatoes, I think regular diced tomatoes would have sufficed. The stewed tomato pieces were slightly larger than what I like.

Oatmeal Butterscotch Cookies

I really enjoyed these cookies, although they were a bit too sweet for me personally. Because there were many separate components in them, such as the oats and the butterscotch chips, they tended to fall apart more easily, so be sure to wait until they have cooled down (although they were delicious warm as well). All of my roommates kept eating them and coming back for more of the chewy, butterscotch-y goodness.

Ultimate Maple Snickerdoodles

Amazing! These cookies were the perfect combination of sweet and subtle, crunchy outside and chewy inside. I can't stop eating them. I couldn't find maple sugar, but brown sugar is fine as a substitute. Nor did I use actual maple syrup, but the regular (cheaper) syrup works just as well. Absolutely delicious!

Red Velvet Cupcakes

These cupcakes were absolutely delicious. I made them for my friend's birthday, and it got rave reviews from everyone, even from my roommate who snuck a cupcake before I administered the frosting! The frosting itself is very sweet (and probably my favorite part of this recipe), but it compliments the more mild-tasting cupcake, which was a bit dense, very well. All I had was an organic cocoa powder, but that turned out fine. The raw batter tasted chocolatey, but the final product was still delicious. Using an electric mixer definitely helps the process along quicker. The only thing I'm a bit disappointed about is the fact that I didn't leave more to eat for myself!

Apple Butterscotch Crumb Pie

This pie provided a very different taste and texture, but it was most welcome and delectable! There's nothing too special about the crust, but since it was more bland, it definitely helped cancel out some of the sweetness provided by the butterscotch topping. Using tart apples (such as Granny Smiths) also contributed to the perfect balance of sweet and tartness this pie has. Instead of doing two small pies as suggested, I used a regular 9 inch pie pan, and the proportions of ingredients as calculated by this site was the perfect amount. I actually used 5 apples instead of 4, and there was ample filling left over for a second pie. The delicacy continues...

White Chocolate Raspberry Cheesecake

For someone who does not particularly enjoy the consistency of cheesecake, I found this recipe very delightful. I have no complaints, other than it seemed to run out very quickly due to everyone asking for seconds. The raspberry sauce can be a bit thick, so having a larger sieve may make the process go faster. Also, I had to increase the baking time by about 20 minutes before it seemed to be the right consistency expected from cheesecake. The chocolate cookie crust went very well with the cheesecake, but the recipe only calls for enough to cover the bottom of the 9 inch pan, so if you want the crust to span up the sides, about another half cup of cookie crumbs is needed. Overall, a great dessert to top off the evening (especially on Valentine's Day).

Frozen Peppermint Cheesecake

This cheesecake was absolutely delicious! I'm not a fan of cheesecake and only decided to try it for our holiday party because of the aesthetics, but it did not disappoint in the least. Part of the reason I enjoyed it was because the consistency was not like that of cheesecake, probably because we added lots of condensed milk to the mixture, so the texture was more of a liquid than densely packed. We added crushed peppermint as a topping, but next time, I think adding some into the mixture would give each bite a nice crunchy surprise and an even more peppermint taste, although the peppermint extract certainly did its job. Overall, great holiday dessert.

Roasted Cajun Potatoes

These make the perfect snack or side dish or anything, really. They were so tasty! I baked them about twenty minutes longer than the recipe called for because I like them crispier, but that didn't seem to matter, because everyone gobbled them up. Scrumptious.

Traditional Mashed Potatoes

Absolutely delicious! I used as much milk as I wanted for an even, creamy texture, and I added some powdered and roasted garlic to it for more flavor. The general consensus confirmed that it worked out wonderfully.
