SWEET, Sweet Potato Fries

Reviewed: Sep. 6, 2012
Ok. Quite disappointed. :( the seasonings were right for the sweet potatoes, however, too much ended up on my very thinly cut potatoes, by the time they were 'done', they were too mushy to be like 'fries', so maybe I over cooked them?

Amazing Pecan Coffee Cake

Reviewed: Mar. 16, 2011
Simply Perfect! Made it exactly the way it says, with the exact ingredients/measurements, and all I can say is, that it's perfect. If you need a coffee cake and don't already have a great recipe and aren't sure which recipe to pick, PICK THIS ONE! You won't be sorry! :) The cake itself was moist, the top was crunchy, but not too crunchy. And it was so delicious! I made this for the first time for a going away brunch, for a friend. It was my first time ever making a coffee cake, everyone loved it, I loved it, and so will you!

All-Around Good Smoothie

Reviewed: Sep. 3, 2012
Fantastic! Even though I made a few slight changes, overall I followed the ingredients to the T. My youngest daughter loves it, as well as my husband and I. My oldest daughter hasn't tried it yet. I used 2% milk, vanilla yogurt, and I bought already ground flax seed. I bought frozen whole strawberries (1 prior to chopping) and 1/2 frozen banana like suggested. ***TIP*** If this is you first attempt at freezing bananas just for this recipe, peel the bananas first, then wrap in foil.***

Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 30, 2011
LOVE THIS! The only thing I did differently: I took the advice of others, and sautéed onion, garlic carrots and celery in olive oil, then added it into the soup. Also, instead of adding in the seasoning packet from the rice/mix box, I used 1 TBSP of salt-free Mrs. Dash Herb & Garlic seasoning. I try to avoid the MSG and preservatives and extra sodium in those seasoning packets. Turned out just fine!!! I'll be making this again and again! Oh and for those who might want to know, I bought a generic brand 6.6 oz box of rice/mix. Checked on the back of the box instructions to make sure it called for 2 cups of water to cook the rice in. :) Enjoy!!

Grilled Chicken with Rosemary and Bacon

Reviewed: Aug. 30, 2011
ok, no one in my family liked this. the skin was still kinda 'rubbery', because the bacon around it is what got crisp. so the bacon was good. the skin was nasty. the rosemary under the skin was not something any of us eat, unless it's chopped up or something kinda small, but using a whole twig of it, we had to remove it, then it was just like eating, crispy grilled bacon, rubbery chicken skin and plain chicken legs. many thumbs down all around the table.

Grilled Peanut Butter and Jelly Sandwich

Reviewed: Jul. 27, 2011
you can make it easier, by just toasting your bread in the toaster... and applying the peanut butter right away while your toast is still hot. It gets all melted and gooey, quickly... add your jelly if you want and eat while it's still warm. Delish! Just thought to share a toasted PB&J that I have been making since I was a kid, and now my girls do the same. **because I did not actually make this recipe/grill my sandwich, and I have to rate it, I gave it a 3**

Pumpkin Pie Bars by EAGLE BRAND®

Reviewed: Mar. 1, 2011
I gave this two stars mainly because it just looks gross. The taste isn't bad, a lot like pumpkin pie, with the pumpkin pie texture. the crumb bottom doesn't stay crumbly and the crumb topping gets all soggy. I've made this 3 different times, thinking maybe it would turn out different. every time it's the same, and the only thing I've changed in the recipe is adding some nutmeg/ginger and cloves in place of the allspice. otherwise, if you don't mind, kinda gross looking, mushy 'bars' that aren't really bar like, it's not bad. but presentation is important especially when giving these 'bars' out as gifts on holiday plates.

Cinnamon-Apple Chex® Mix

Reviewed: May 22, 2012
Yep that's right, another 5 ***** STARS! I followed other suggestions: made apple chips: very thinly sliced apples, (I used red delicious), sprinkled lightly with cinnamon and sugar, baked at 200 for 2 hours; and also substituted Cinnamon Chex for Wheat Chex; used Whole Natural Almonds, not salted. Also prepared over stove top, all in one large pot. So addicting, with a family of four, this was gone within 24 hours. :o

Easy Barbecued Pork Chops

Reviewed: Mar. 7, 2012
Giving this 5 stars: Easy, fast, taste great and family of 4 approved. I chopped veggies before I started browning chops. I used a red bell pepper instead of green since that's what I had. I also minimized the chili powder (afraid of it being spicy and only used 1/8 tsp). I had read that in another review and (which is why I thought to try this recipe) that this is more sweet 'n' sour like, less BBQ. My kids aren't big fans of most BBQ sauces, so this was a nice change. Also look fwd to making this for a quick night of sweet' n 'sour chicken as well.

Lemon Pie Bars

Reviewed: Jul. 27, 2011
I give it four stars because even though the taste was decent, for us, not lemony enough... I think next time I will double the lemon juice, zest, sugar and eggs to make it thicker. My first time making these, they turned out with more crust than 'filling'. Not like a lemon pie or any other pie. Since most pies have more filling than crust. So, if you just like the idea of a lot of crust and a little filling, make it as is, otherwise I would double the recipe for the filling part. Kinda wishing I went with the recommendations to double it from the start, but I just kept thinking 8 Eggs!! :o But I guess that's what I'll do if I try it again. It was quick and easy to make. So for something fast and lemony it's a good recipe.

Sage Pork Chops

Reviewed: May 30, 2011
These weren't too bad. Easy to make. Mine turned out just a bit salty for my taste, but not really really salty, just more salt than I would have preferred. I didn't have to cook mine as long .. they were probably thinner than recommended. Overall not bad. I didn't give them 5 stars because I didn't think they were an exceptionally great pork chop... but for a good middle of the week-night easy to throw together chop the whole family will eat.. these will do! :)

Asian Orange Chicken

Reviewed: Mar. 27, 2011
AWESOME! Followed the directions and the ingredients exactly, (except I omitted the red pepper flakes) and it was perfect. Oh yeah and I didn't stir in the chicken into the sauce at the end, instead I served the chicken separate with the sauce on the side (kids are picky like that). It was hit. Next time I might add just a tad bit more brown sugar (kids liked it but thought it was a bit too tangy for their taste). However hubby and I thought it was better than Chinese Restaurant style could ever be! Thanks a bunch!

Absolutely perfect. Even the kiddo's love these! Come out juicy and tender every time! The only thing I suggest is to cover when baking in the oven until done.

Angel Chicken Pasta

Reviewed: Mar. 7, 2011
This was amazingly superb! Even my picky eater kids ate it. I was a little worried about the different flavors of the Italian dressing mix, mixing with the white wine and the cream cheese and the soup all mixing together... and tasting good, but it did!! I didn't have cream cheese with chives, just regular cream cheese and it turned out fabulous! First time I 'baked' chicken breast that did NOT turn out dry!! Will be making this again and again!! :D

Peanut Butter Popcorn

Reviewed: Sep. 10, 2010
This is wonderful! I used two bags of Natural Popcorn, one helpful hint: remove the un-popped kernels before setting the popped popcorn aside, in two separate bowls (easier to stir two bowls than ONE big bowl). :) Also I threw in a couple of handfuls of Cocktail Peanuts into the 2 bowls of popcorn. Poured only half of the topping over each bowl of popcorn at a time and only baked each bowl one at a time, at 250 for 15 minutes, stirring every 5. (don't forget to spray cookie sheets with non-stick cooking spray) Also used a Whisk to stir the marshmallow topping mix, every minute while it melted, helped break up the marshmallows easier than the wooden spoon I was using at first. Hope this helps!

Fruit Leather

Reviewed: Sep. 6, 2013
I give this four stars, because I took instructions from another recipe & made in into one. I used 8 pears & 4 apples, since that's what I had. Chopped them up & placed in a large pot with 2 tbsp water, 1/4 cup fresh lemon juice, 1/2- 1 cup of honey (I added a little to start and taste tested along the way, and added a bit more until it was the right amount of sweetness), a generous sprinkle of cinnamon and about 1/8 tsp of cloves. Cooked over medium until fruit was very soft, smashed with a fork, and let it cook down until almost no fluid was left. Then puréed it in the food processor. Then spread over cookie sheets lined with parchment paper. Placed in oven at lowest temp (mine is 170f), closed the door all the way & let bake for about 7-9 hours.

Oaty Cereal Bars

Reviewed: May 22, 2012
THESE ARE THE BOMB!! No bake, takes like no time at all to whip up, takes a bit to cool, but then dig in!! The first time I made them, I thought they were more honey than peanut butter tasting, so the second time I made them I halved the honey and sugar, but then they were too gooey, not sticky enough, so I had to quickly make another 1/2 batch of honey and sugar mix to pour over top of cereal, peanuts and peanut butter... then quickly mixed while keeping everything over low heat. Next time I might trying to do half honey half corn syrup to ease the honey flavor just a tad and bring out the peanut butter flavor a bit more. Otherwise these are still very exceptional. I just have one daughter who's not very big on the taste of honey and would prefer more PB tastes. I love how easy these are to make, and serve!!

Mexican Casserole

Reviewed: May 7, 2012
I give this 4 stars, simply because I changed a couple of ingredients to suit my family's taste preferences. My casserole results, I'd give it 4 stars. What I did was substituted 1 can low sodium black beans for ranch style beans (no one likes ranch style beans here). I used regular Petite diced tomatoes (skin on - I wasn't sure why the tomatoes needed to be peeled?), and instead of 2 Tbsp of chili powder, I used about 2/3 of a packet of Taco Bell taco seasoning (I think I added about half a packet, stirred well, tasted it, needed a bit more, but I didn't add the rest of the packet, just a little more, and have some left over, so 2/3 or 3/4 of a packet? tasted again and it was just enough). I also put a layer of shredded cheese in the middle of the casserole in addition to on top. Three out of my family of four liked this casserole and wants me to make it again. I kept thinking it's quite chewy. I wonder if it would work well with layered tortilla chips? Will try that next time. :) **UPDATE** 7/7/12 I completely forgot that I added taco bell taco seasoning to this the last time I made this, which was the first time - also which was the time I put up the review... so tonight, I'm in the kitchen and hmmm. it's missing something, so yah, I added TB taco seasoning to it. lol silly me! I did remember about not wanting to add tortillas, but tortilla chips, so this time, I put the chips on top, covered w/Cheese and baked uncovered for about 20 minutes. NOW it's 5 STARS!!

Easy French Dip Sandwiches

Reviewed: May 30, 2011
Ok as far as french dip sandwiches go... this just wasn't that great. My youngest didn't eat it. My oldest thought it was ok.. (which was odd being as she's just picky) my husband well.. he's Active Duty military and he'll eat just about anything so that doesn't say a whole lot being as he ate this... and being as French Dip sandwiches are my favorite, I was really disappointed in this. :(
