Pineapple Banana Bread

This was a total hit as an afternoon snack for 5 hungry kids! To make it more nutrient dense (not low fat!) I made the following changes: instead of white flour used 1 c ground oatmeal, 1 c whole wheat flour, 1/2 c ground flaxseed, 1/2 c wheat germ. Only used 1 cup of sugar. Subbed canola oil for veg oil, and added 3/4 c applesauce to the liquid mixture. My kids usually hate my "doctored" recipes, and are very picky, but this was a big winner!

Best Brownies

Pretty good! I replaced the 1/2 c butter with 1/2 c nonfat greek yogurt, did one whole egg and one egg whte and kept the frosting the same. That dropped the fat per brownie to 3.5g and the calories down to 135. For that nutrition info, these are a real calorie bargain for the yummy taste!

Baked Coconut Shrimp

Perfect Pulled Pork

This pork is amazing! My picky daughter even brought the leftovers for lunch the whole week. The key to this recipe is to allow the rub to sit on the roast for 24-48 hours before slow cooking.

Black Bean Salad

For morons like me, please note WEAR GLOVES WHEN YOU CHOP/HANDLE JALAPENOS! Good gracious, I'm still paying for yesterday's mistake. But this salad is amazing and worth the days of pain I will endure. I've already had several people ask me for the recipe.

Inside Out Ravioli I

Really yummy!I made it meatless with a 26oz jar of pasta sauce and 8 oz can of tomato paste and the pasta was perfect. My kids did not gag or complain about it- a resounding endorsement coming from them!
