Curried Couscous with Spinach and Chickpeas

Yellow Squash Patties

This was a great way to get my toddler to eat squash. I made several changes: used whole wheat pastry flour, added garlic, wheat germ, cumin, coriander, and turmeric. Also, cooked them in coconut oil.

Spiced Pumpkin Molasses Muffins

I made the following changes: used all whole wheat flour, omitted the brown sugar and added a ripe banana, replaced the canola oil with coconut oil, used full fat plain yogurt, substituted 3 teaspoons pumpkin pie spice for all the spices, and added 1/4 cup almond meal + 2 Tbs. wheat germ. Delicious and healthy!

California Roll Salad

This was so much easier than making sushi - and tasted just as good. I used brown rice and increased the amount. I left out the lettuce, but added ginger, sesame seeds, and strips of seaweed.

Brown Rice and Black Bean Salad

With a few modifications, this turned out great. I served it as a warm dish. I cooked the rice in a rice cooker and then added the other ingredients to the cooker after the rice was done. I used fresh veggies instead of canned and added cumin and coriander to give it some more flavor.

Gujarati Carrot and Peanut Salad

It's a hard to find a good salad recipe that doesn't use any oil, but this salad is delicious. I substituted honey for the sugar and replaced the peanuts with walnuts and sun flower seeds.

Best Buckwheat Pancakes

I made a few changes to the recipe: I replaced the buttermilk with 1/2 cup yogurt and 1/2 cup almond milk. I substituted applesauce for the butter. I halved the salt and baking soda (and added a little baking powder). And I left out the sugar, but added blueberries and bananas.

Curried Cauliflower Soup

Based on other reviews, I added cumin, turmeric, and coriander. It tasted pretty good, but was too thin. I feel like it needed something else like mushrooms, shrimp, or green veggies.

Mexican Bean and Squash Soup

I made a few changes and it still turned out great. I left out the celery and peppers and increased the butternut squash. I used cilantro instead of parsley and 1 1/2 quarts veggie broth instead of chicken. I also left out the sour cream and cheese at the end.

Moroccan Tagine

I made several changes to this recipe. I left out the chicken, substituted one leek for the onion, used agave syrup instead of sugar, and added 1 tsp of cumin, 1/2 tsp of turmeric, and 1/2 tsp of cinnamon. I added all the spices at the beginning with the olive oil, garlic, and leeks. It was incredibly delicious. I can't wait to make it again.

Moroccan Lentil Soup

This stew is excellent. I substituted chicken broth for 4 cups of the water and used cinnamon and nutmeg instead of cardamon. Served with Moroccan couscous.

Banana Cranberry Bread

I cut the recipe in half to make just one loaf (but kept the 3 bananas (very ripe) and 1 cup cranberry sauce). I also made some changes to make it healthier. I used only 1/2 cup brown sugar and substituted apple sauce for the shortening. It turned out moist and delicious.

Strawberry/Rhubarb Crumb Pie
