Key Lime Pie VII

Outstanding. I didn't make any alterations to the original recipe. I took the suggestion of one writer and used a garlic press to squeeze the key limes. What a great trick! People gobbled this up and I cannot wait to make it again.

Grandmother's Buttermilk Cornbread

Oh my goodness. WOW! I took the author's suggestions (used the same pot to mix the ingredients in = less dishes, and I used whole wheat flour) and this came out PERFECT. So delicious, so moist. We enjoyed it days later. I served it initially with "Simple Turkey Chili" and two days later by Saturday it was still stellar. We had it with two fried eggs on top and it was so good. I made mine in a loaf pan and baked it for exactly 38 minutes, but again I used whole wheat flour so white flour may need a time adjustment. I'd give it more stars if I could.

Turkey and Quinoa Meatloaf

I made this just last night and I am impressed. My first time cooking with quinoa! I loved loved loved this meatloaf. I made it exactly as the recipe states and it came out beautifully! Easy and delicious. I am very excited that I have my leftovers here for lunch!

Anytime Fruit Salad

I personally loved this fruit salad. It definitely does not keep for more than two days, so scale back if you are making this for a small crowd. If you use low fat cottage cheese and cool whip it brings down the fat content, making it a lighter snack to enjoy. A unique dessert that I really am a fan of!

Peanut Butter Cup Cookies

YUM!!! Make these cookies! You will not be disappointed! Like most, I did not have mini-cupcake tins so I just used a cookie sheet and they still came out wonderful. Thank you for this recipe!

Coconut Curry Tofu

This was good but it didn't stand out. I wouldn't really make this again unless I changed a lot of it. I did make the recipe exactly as offered so perhaps using some of the recommendations would change it around. The tofu did take on the flavor nicely and I loved all of the different vegetables but there was something about this dish that wasn't too memorable.

Wonton Soup

I'm giving this four instead of 5 because it did take a while to construct..With that being said, I was proud that I was able to make the wontons from scratch! I highly recommend going on YouTube and searching for a video on how to wrap/fold a wonton. The visual was VERY helpful. I made the recipe near exact, except I substituted turkey for the pork. The flavor of the wontons was DELICIOUS, and the simple broth complimented them well. I followed everyone's recommendation to cook the wontons in boiling water prior to the broth. The recipe does yield a high amount of wontons (24) so I did have plenty leftover to freeze for quick meals in the future.

Fantastic Mexican Dip

I made this with ground turkey and it was a HIT. My brother's gobbled it down on Christmas. I used light cream cheese, light sour cream, etc to cut down on fat. I like that it gives you more protein and less carbs than the traditional mexican dip. Delicious!

Tofu Parmigiana

If possible, I would have given this recipe more stars. YUM. Tofu will never be the same after this recipe! I highly recommend taking the suggestion of roasting the tofu slices prior. I roasted mine at 400 degrees until both sides were brown. I also added a layer of ricotta to mine and cooked this in a loaf pan so I could stack the tofu instead of having just one layer. I did a thin layer of tomato sauce, then the breaded, cooked tofu, a thin layer of ricotta, tomato sauce, another tofu layer, and topped this with tomato sauce and the mozz and parm cheeses as instructed (Layered like a lasagna I suppose). To simplify, I used a jar of preseasoned tomato sauce (roasted garlic) and this came out beautifully. Thank you Jill!

Amazing Chicken

Oooh la la! So easy to make. I used drumsticks and it came out really well. I highly recommend this recipe! For a different option the whole wheat seasoned breadcrumbs work extremely well. I am going to try this again tonight!!

Artichoke Spinach Lasagna

This was my first time making vegetarian lasagna so I made this recipe nearly exact. I took some suggestions and used about 2/3 can of vegetable broth instead of the entire thing, I used 5 oz of fresh spinach instead of the frozen, I used tomato basil feta (couldn't find the recommended) on top, whole wheat lasagna noodles. YUM YUM! The longer it sits the more moisture it absorbs, so if there is a lot of liquid let it sit for more time. I definitely recommend using whole wheat lasagna noodles and I did boil them as instructed. It came out wonderful. Thanks for this recipe!

Baked Oatmeal II

Great recipe. I add maple syrup, flax meal and wheat germ to give it a healthy, tasty kick. I used chopped apples instead of the cranberries. This recipe can be varied using fruits that are seasonal, which is what I love about it! I usually make this on a Sunday and then have plenty left for all week long!

Corn Dog Casserole

I could see the potential in this but I think it really depends on your cornbread mix. I used Bob's Red Mill stone ground cornbread mix and it didn't turn out as well as I would have liked. I baked it for 15 minutes and then added a can of vegetarian chili to the top and baked for an additional 15. I think if I had just used Jiffy (Bob's Red Mill was thick and heavy) it would have been light. I will try this again but just a word to all: the simpler the cornbread mix the better!

Vegetarian Chickpea Sandwich Filling

Really excellent, especially as a sandwich filler for vegetarians. Very filling and so many possibilities. Great on bread, crackers, and stuffed into a hollowed out pepper! The original recipe is pretty amazing on its own, my only variation on my second try making this was to add a bit of curry for a curried chickpea salad. Thank you for this recipe, what a great idea!

Apple Dumplings I

I made these last night and served them with a scoop of butter pecan ice cream. Macoun apples worked beautifully in this recipe, and I followed suite by chopping the apples and tossing them lightly with cinnamon and sugar. I didn't use as much butter as asked and I still though the recipe came out incredibly. An excellent dessert for those who want something homemade, but don't have the time to whip up the dough. I would've given it 10 stars if I had the option!!!

Easy Vegetarian Red Beans Lasagna

I am giving this 4 stars because while the flavor was awesome (I'm not kidding, perfect flavor combination) I used the no-boil lasagna as recommended and it didn't work out as well as I had hoped. It baked longer for 20 minutes so the noodles would cook. I will make this again and will definitely sub in pre-boiled lasagna noodles. Stellar recipe otherwise!!
