I am a very busy mother of two... well, three if you count my husband. :) Between working full time and attending school 2-3 nights a week it's a challenge to create tasty and fabulous dishes for my fickle family. However, I do enjoy trying!
My favorite things to cook
Bundt cakes, fried chicken, mac n cheese, enchiladas... anything my family eats I enjoy cooking for them.
My favorite family cooking traditions
One of my favorite holidays is Halloween. Every year I make a dark chocolate bundt cake infested with spooky mice made out of cookie crumbs. People are always afraid to eat it but once they do it's thoroughly enjoyed!
My cooking triumphs
I love trying new things and with the help of this website I have made so many wonderful dishes that I would have never attempted from a regular cookbook. Allrecipes is my best secret weapon by far.
My cooking tragedies
I used to have a tendancy to over salt my dishes... but now I've learned sometimes less is more. :)

Beer Margaritas
This is the only kind of margarita I make now. The beer cuts the super sweet lime taste perfectly. But they will knock you on your butt... so pace yourselves! lol

Classic Waffles
These were really good! However I used the cinamon sugar mix in place of 2 tbs sugar. The most delicious cinamon waffles ever! yum!

Cheesy Potato and Corn Chowder
Everyone raved about this! I made this on a camping trip... Cooked it in a cast iron dutch oven over a fire pit. I think what made it so delicious was fire roasting the corn. I also used frozen pre-cut potatoes and added pre-cooked chicken and served with sour cream. A-mazing.... we're still talking about this one! Thanks! :)
