Sausage Pasta

Fantastic! I used fresh diced tomatoes instead of a can, fresh spinach and vegetable broth, because that's what I had around and it was great! My sausage was fatty enough that I didn't add the olive oil. I didn't need it.

Roasted Potatoes with Greens

I really liked this, but I made quite a few changes. I put 2 extra cloves of garlic, because I just think there's no such thing as too much. I also used regular potatoes, it's what I had. I cut them small to cook faster. I don't like rosemary so I used dried oregano instead, same amount. Delicious!

Browned Butter Vegetables with Almonds

shockingly good! Didn't have the almonds but was good without. I used a very sweet wine, it was all I had, but was still very good! I also used real garlic with salt and pepper. Added zucchini and carrots and cut all the veggies small.

Vegan Black Bean Soup

We made this while in Spain and therefore didn't have any chili powder! But, even before seasoning it had excellent flavor. We did make some changes: We used 2 cans of pinto beans and 2 cans of kidney beans, doubled the garlic, added anaheim and bell pepper, used a little tabasco to make up for the chili powder and garnished with cilantro (home-grown, cause you can't find that here either!). The boyfriend said that if he could get his face in the bowl he would lick it clean. :)

Four Cheese Sauce

Oh so cheesy and delicious!! Use a little of the butter to saute some very finely chopped onion and garlic before adding the creme and spice it up with some fresh ground black pepper.

Zippy Summer Shrimp

This recipe was a hit, my only complaint was that when I tried to do this on high heat, per the directions, all the spices burned before I could even get the shrimp in (Thank goodness!) but was great at a -much- lower temp. I will say, that based on all the reviews, it might have just been my oven but I felt it was worth mentioning. I served it on a bed of angel hair, a healthy serving of lightly pan fried vegetables (squash, zucchini, onion and garlic) and a four cheese sauce recipe (found on allrecipes.com) that I added garlic, minced onion and black pepper to. Very Yummy, make sure not to put too much sauce, because you definitely want to be able to taste that shrimp!
