Amazing Gluten-Free Layer Bars
I made these for a friend of mine with Celiac's and for being such a quick and easy dessert they turned out well. I'm not used to making something so simple, lol! Simple flavorful ingredients, good for when you don't have a lot of time (or space) to make a dessert, and even better for being gluten-free.

Quick Quiche
Very good for such a quick fix. I used marbled cheddar cheese since I didn't have any Swiss on hand and added about 1/3 c. sweet red peppers which really gave it something extra. I only used 6 slices of bacon and wish I had used more - the more bacon the better the bottom will turn out taste wise, so don't hold back on it! I baked it in a 9-inch glass pie pan and the sides rose quite a bit during baking, but evened back out once cooled and looked great. I recommend a glass pan if you have one since it cooks more evenly and thoroughly. I would make this again if looking for a quick delicious brunch dish, and will definitely try adding other ingredients to it as well!

Banana Crumb Muffins
These are delicious! The texture is amazing - moist and very flavorful. I added 1 tsp vanilla to the banana mixture to give it a little extra oomph and I think it helped add even more to this already great recipe. It also left a cool brown marbling effect inside the muffin since it stuck to parts of the banana :) The crumb topping is awesome. I didn't know how much to put on since I hadn't made a crumble muffin before so I put it on very generously and I am so glad I did, it turned out perfectly. I brought these to work and got nothing but the utmost compliments and was even told I should sell them because I'd make a fortune. To sum up: the verdict is DELICIOUS!
