Single Mother of 3 great and crazy kids. Things can get hectic or short on time, and I try to make more home cooked meals, but sometimes I just need something quick and easy... Trying to find new recipes that are easy yet still healthy and that the kids will actually eat. I'm trying to transition our pantry and fridge over to more whole foods, less carbs, and low sugar low calorie. This isn't always easy on a tight budget. I do get a few coupons for things, but there's not usually coupons for actual food it's all the pre-packaged foods. So I'd be happy to get any advice on budgets or healthy cooking ideas for kids.
My favorite things to cook
I love to cook and can cook just about anything as long as I have ingredients, directions, and the tools. I love lots of different types of cuisine, and love trying new things. I'm not too big on fish but I am trying to eat fish at least once a week now. I love baking home made dessert breads and pies and cakes, but I try not to now that I'm trying to get my family more healthy. I love italian foods i think most, I really also enjoy asian but have not had much experience with it and can never come close to the taste I would get at a restaraunt (any tips on that would be great). I don't know if I can pick out favorites... Love chicken marsala or chicken curry with cous cous when I do make, not often enough. I like using the slow cooker for soups or chili. I find my bean soup is better on the stove though, usually do a good vegetable that may be too acidic from all the tomato sauce and diced. I used to make a soup out of different root veggies and squash etc. But I eat it way too fast.
My favorite family cooking traditions
I love making special cakes for the kids birthdays. I'm not great at cake decorating, but the kids love them and everyone always says how awesome they look, though I think they could be much better if I actually had some classes. But it makes me feel so good being able to make a cake that they love, and I can make it something that they have an interest in. I usually try to do home made christmas cookies. I always make a big thanksgiving meal with turkey, and another with ham for christmas. I love swapping recipes especially when I try something I really like that someone made, usually something new. I'm pretty good at remembering a recipe after I've made it a few times and sometimes tweek it or add things to it. And I know there are also some recipes I forget and it doesn't come out the way it used to. I definitely need to get a recipe holder or book together and start writing them down.
