Turkey-Cheese Macaroni Bake

VERY easy to make and VERY good. The only different thing I did was used the shell shaped macaroni - only because it was all I had on hand. Great tasting and great recipe for left over Thanksgiving turkey! Broiling it for the last five minutes was perfect - it made everything on top just a bit crusty.

Jalapeno Chicken Enchiladas

This recipe had really good flavor, but it was way too soupy/runny. I cut the ingredients in half like other reviewers suggested. The only things different I did were: I didn't have tomato sauce so I used a 10oz can of enchilada sauce and 5 ounces of diced tomatoes and green chiles. I used fat free sour cream. I also used all four jalapenos - this was the only ingredient I didn't cut in half because of other suggestions. I did seed them and remove the membranes though. Again, I really thought it had GREAT flavor, just too runny though. Next time I will cut back on the sour cream and maybe the soup. It might have been because I used the fat free sour cream - maybe it's more runny than the full flavored? :) I dunno, but I will experiment and try this one again.

Squash Casserole Side Dish

Followed another review and used 3/4 cup Bisquick and 1/2 cup of milk. It was not too much dough or biscuit. However, it could have stood a bit more seasoning - I added salt and pepper and that took care of it! Will definitely make again!

Tomato Cucumber Salad

Very good! I used 1/2 a red onion and added 1/4 cup feta cheese as someone else suggested. I also skinned and seeded the cucumber and then sprinkled some kosher salt on it and let it sit for about 10 minutes to help draw some of the moisture out of it.

Savory Tater Tot Casserole

Excellent dish! I did as some recommended and browned the beef first with minced onion and three minced garlic cloves, some pepper, and salt. I drained the grease from the beef and then mixed all the ingredients except for the tater tots - those were placed on top. But instead of full sized tater tots, all I had were "potato rounds." These are tater tots shaped like a disc instead of a cylinder. I also did not have mixed veggies, so I used half frozen peas and half frozen corn.

Greek Garlic-Lemon Potatoes

Very good and easy recipe and I would make it again. My potatoes were just a bit on the mushy side but they were still delicious. I would probably decrease the cooking time a bit next time. However, they did not burn like some people were concerned about - just keep an eye on them and add water if necessary.

Cheddar Bacon Hamburgers

Not a horseradish fan, so I left it out. I left everything else exactly the same but I added an egg since one or two people said the burger fell apart while cooking. I also think a key to holding it together is keeping it cold until you are ready to cook it. It was really a good burger and moist too.

Italian Sausage Stew

VERY EASY! All you do is brown the sausage and then add everything all at the same time and then simmer it. The recipe does not specify how much and what type of pasta to use so I used about an 8 oz bag of Rotini (corkscrew style) pasta. Next time I will use 16 oz of pasta. It is very tasty, but it could use a bit more spice for flavor. I did not use the spicy Italian sausage, I think that would have made the difference. I did find it but, I had trouble finding the "Italian Style Vegetables". It consists of green beans, cauliflour, broccoli, carrots, lima beans and peppers.

Southern Potato Salad

Pretty good - the first time I made it, it tasted perfect but I did not cook the potatoes long enough. I made another batch and cut the potatoes in half before boiling them, this time they got done but I think I used too much mustard. I was able to cut the taste a bit by adding a little sugar. A previous reviewer asked what size potatoes to use - I used a little less than 2.5 LBS (about 38 oz) and AA Large eggs. Another tip is to cool the potatoes before you cut them up or it will be mushy. Next time I will cut the mustard to 1 or 1.5 TBSpoons.

Best Spanish Rice

I gave this one five stars. I have made it 3 or 4 times and it is really good. One of the important parts is to brown the rice. I noticed some people skip it and it doesn't come out as good. I also discovered that adding some more salsa to it when you reheat it in the microwave works really great. This also goes for reheating left over restaraunt spanish rice. I wouldn't change a thing about this recipe.

Pork Chop Packs

A pretty decent meal. The recipe didn't specify how to prepare the sweet potatos, so I peeled them and cut them in half length-wise and only used half in each packet. They still did not get done in 45 mintues so I had to microwave the potatoes afterward.

Really good flavor. It was a LITTLE runny as others have said, but not too bad. Be sure to salt the cucumbers and let it drain in a colander as per the instructions. I think the salt helps draw some of the liguid out.

Slow Cooker Creamed Corn

Orange Pork

EXCELLENT! I also used brown sugar instead of regular sugar, and I cut the soy sauce in half and replaced the lost soy sauce with orange juice. The sauce was very good and not too salty like some reviews say it was. NO COMPLAINTS!
