Chef John's Coq Au Vin
This dish is the bomb! I followed the recipe to a tee accept I used dry thyme instead of fresh, and before adding the sauce back to the thighs, I put them under the broiler to crispy them up a bit. I was worried because I don't like red wine (or any wine for that matter) so I didn't think I would like this dish. Boy was I wrong! I paired it with mashed potatoes and fresh bread and was so stuffed. Even my husband loved it and he's pretty finicky about trying new things. If you are on the fence about whether or not you want to try this, I have the answer for you~GO MAKE THIS DISH! You'll be so glad you did!

Honey-Brined Fried Chicken Breasts
It was pretty good. I used only 1/8 c salt in the brine. Then I used garlic & onion powders instead of salt in the flour dredge. Turned out nice and tender with good flavor.

Extreme Chocolate Cake
I made this cake today and boy was it great! I did make one change- instead of water, I used a few others' suggestions and used 1 cup of strong coffee. It really enhanced the flavor of the cake and it was so moist. I also only filled each pan 1/2 full and had a bit of batter left, so made a few cupcakes. I iced it with vanilla butter creme frosting, and just left it as a 2 layer cake. My family (even my 15 month old) loved it! Thanks for this awesome recipe! It's a definite keeper!
