Cranberry Bars

I made these tonight for Thanksgiving tomorrow and of course have done plenty of taste testing. These are truly great! They look very pretty and festive too. First of all I only used 1/2 cup of butter and it works perfectly! Someone said they were greasy and I hate it when bars are greasy. Also, I was so close to cutting back on the sugar but in the end I followed the recipe and am so glad I did cause I think these would have been too tart if I would not have used the full amount of sugar. I just flattened pieces of dough in my hands and they would lay those pieces on top of the the filling and it works very well. It is true that you must wait until they are completely cool to cut but with any bar like this, I put them in the freezer for maybe 10-15 minutes before cutting (use a serated knife like a steak knive) and they cut fine and look nice. I did add chopped pecans on top of the cranberry filling too. I dusted with powdered sugar and next time will drizzle white chocolate. I was worried it would be too sweet with chocolate but I don't think so! Give these a try.

Huckleberry Buckle II

This was really easy and good! I didn't put quite all the juice on when I was scooping the huckleberry, water, sugar mixture on top of the crust. I just drained the berries out at the end w/ a slotted spoon after I figured there was enough juice on the crust. We served vanilla ice-cream on top of warmed huckleberry buckle and was really good!!!

Paul's Pumpkin Bars

These are excellent! I have been making them for 2 years now and everyone loves them. I just made them for a halloween party and cut out little pumpkin shapes using a pumpkin cookie cutter. I always get asked for the recipe when I serve these.

Corn Chowder IV

EXCELLENT!!! This is the best soup I have ever made. If you like cream of potato soup then you will love this. I doubled the recipe to serve at a Halloween party and did NOT add the margarine. You do not need that at all so save yourself the extra fat/calories and you won't have that grease sitting on top of it when it seperates. Thanks so much for the recipe...I will make again and again. :o)

Absolutely the Best Nacho Dip Ever

The only problem that I had was that the salsa made the dip runny. I made it earlier in the day and quite a bit of water was coming out of it when I served it. The cocktail sauce does taste so good in it and I did use olives instead of cucumber. I am thinking of trying it w/out the salsa next time.

Grilled Gyro Burgers

Really liked these! I do need to experiment a little more with the cucumber sauce cause wasn't overly crazy about the yogurt taste. I did add some sour cream and might use more sour cream next time. The burgers were very tender. My husband loves gyros and thought these tasted very close to the real thing. Thanks for a great recipe that I will make again.

Best Barbequed Burgers

Excellent! I always use the leanest ground beef I can buy and this recipe makes the burgers so moist and flavorful. I cooked them on my George Foreman Grill. Thanks for a great recipe...I will always use this when making burgers.

Baked Pork Chops I

This was really good and the pork chops were tender. I didn't have any wine so left that out. I might use cream of celery next time just cause we like that soup better than cream of mushroom. I served this over brown rice and thought all in all it was easy to prepare and really great!

Chicken and Broccoli Pasta

Not too bad! I added a small can of tomato paste and a can of water cause like the sauce to be a little thicker. I didn't add the broccoli since my husband doesn't like it and just served that on the side. All in all was very easy and healthy.

Three Cheese Manicotti

These are really delicious! I made them for a friend who just had a baby and then I made a batch for us. I think they even tasted better the next day. I didn't have M. Jack cheese so just used all moz cheese and it was great!

Beth's Spicy Oatmeal Raisin Cookies

These are absolutely excellent!!! I cut the cloves to 1/4 tsp and didn't have raisins so added about 1 1/2 cups milk chocolate chips. Made these for a camping trip and they were gone in a flash.

Insanely Easy Vegetarian Chili

This is so good! I followed some of the review suggestions and didn't add mushrooms and instead of adding garlic just used 2 cans of diced tomatoes w/ roasted garlic already in them. I didn't have cumin and it was still excellent. I also rinsed the beans and added one can of kidney and one can of black. I loved it and will make it often.
