Balsamic Roasted Pork Loin

Reviewed: Feb. 17, 2015
If you think this is vinegary, you are using the wrong balsamic vinegar. You can't get the $5 bottle and think it will work. Added garlic to this and it was perfect.

Fluffy Pancakes

Reviewed: Aug. 20, 2012
Very good pancakes - very fluffy! You're right, they were GONE almost as soon as they hit the table! Just one suggestion that I like with pancakes is to add one tablespoon of lemon juice in the batter as I love that tangy taste. But the vinegar trick with the milk was great! Thanks for a great recipe!

Pita Chips

Reviewed: Sep. 17, 2012
This was great! So easy, thanks reviewers for the tips on baking and cutting and oiling. My first batch did not crisp enough, so the next day I just put them back in the oven again for six minutes and that made them perfect. My daughter loves the cinnamon and sugar kind.

Scrumptious Salmon Cakes

Reviewed: Feb. 17, 2015
My stepdaughter, who loves crab cakes, but does not like fish, loved this recipe. It's a winner and very easy to make. I browned them for 6 minutes each side and they came out perfect. I used regular yellow mustard in place of dijon mustard and it was fine. This will be made again and again.

Monkey Bread II

Reviewed: Dec. 13, 2012
Really good !-- will wait to cool about 15 minutes next time before flipping on to a plate. The sugar ran all over the place. I did not have raisins on hand but I did use dried currants, which were good as well. I think I will cut down the cinnamon in the dough just a little bit, maybe add it to the sugar/butter to go on the outside instead? This did not last long in my house. My husband is an addict when it comes to sticky buns/sweet rolls!!

Down-Home Black-Eyed Peas

Reviewed: Jan. 2, 2013
This was awesome-- so delicious and perfect for New Year's Day. I did read the comments and added 2 cans of stewed tomatoes, 1 tablespoon of brown sugar, 1/4 tsp of powdered garlic, 1/4 tsp of dry mustard. I used ham steaks cut up instead of a ham hock, and cut the salt in half. I also used two cans of blackeyed peas instead of dry. I recommend the frozen okra-- great touch. I put it all in the crock pot for 4 hours on high. It came out perfect.

Bacon Cheeseburger Meatloaf

Reviewed: Feb. 1, 2013
Great idea to use the french fried onions in meatloaf. I did not use bacon, mayo, mustard or cheese, but substituted chicken Stove-Top stuffing in place of breadcrumbs. I also used Catalina dressing in place of ketchup, and put a layer of BBQ sauce on the top, but no matter. I made it a two lb. loaf, increased the temp to 375 for an hour, and it came out perfect. I just wanted to let you know you inspired me and I just had what was on hand to make this meatloaf a success! My family loved it!

Burger or Hot Dog Buns

Reviewed: Mar. 11, 2013
These were a hit! They were stealing them before dinner time. I forgot to flatten them a bit, so they came out round and more like rolls, but they tasted so good, no one complained!

Cinnamon Swirl Bread for the Bread Machine

I made one loaf with pecans and raisins, and one loaf without for my stepson. This bread is so good it did not last the weekend! I will be making this again! Thanks!

Guinness® Corned Beef

Reviewed: Apr. 1, 2013
I also made this in the crock pot with Guiness and it came out very well. I put it on low for about 8 hours and it was perfect. Can't say whether or not the brown sugar made a difference or not? Next time I will probably just skip the sugar.

Angela's Easy Breaded Chicken

Reviewed: Apr. 1, 2013
Yep, it's that easy. I do put chicken in a zip lock with the dressing, though-- it makes it faster and less messy. I use home made bread crumbs which makes it taste better than store-bought. I don't bother to flip the chicken mid-way through cooking. It doesn't matter I have found. But I do bring the chicken to the top rack in the oven to "broil" the chicken about 5 minutes at the very end to make it crispy and golden. My family loves it-- and we have chicken parm this way about once every other month.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Apr. 8, 2013
Hands down - best chicken ever. The spices are perfect and slow cooking for 5 hours in the 250 degree oven is the way to go. The smell of the chicken was driving me bananas for five hours. I couldn't wait to eat! I will try this on just plain chicken breasts and cook for less time when I'm in a hurry on a weeknight sometime-- I think the spice combo is really good.

Pennsylvania Coal Region Barbecue

Reviewed: Apr. 16, 2013
I make this all the time! But I just eyeball the ingredients-- I don't really measure and it always comes out great. I add green peppers to cook with the onion so they are soft as well. Because these sloppy joes are so messy I usually serve them on an open bun. Corn on the cob is a popular side with this!

Haluski - Cabbage and Noodles

Reviewed: Dec. 10, 2013
I used this recipe as a base from directions I was given by a Polish man how to make this. I did not have to bake it at all, so I skipped the last steps but I did use the ingredients listed here and added some pulled pork and some bacon. I fried the onions and the meat in the butter, then broke up the meat, added the cabbage and some water and covered to cook about 10 minutes-- meanwhile boiled the noodles, drained, and added to the pot, stirred well before serving. My family loved it, had seconds and is scarfing the rest for lunch. How can you go wrong with cabbage? Yum.

Italian Chicken Skillet

Reviewed: Aug. 28, 2013
This was very good! Added in onions, green peppers and mushrooms, and only used half the amount of chicken, cut into chunks. Easy and quick. I had to add water to this in order for the pasta to cook properly, but once it was done the dish was perfect.
