Jenny's Jambalaya

I make this about once a month because my family loves it so much. I double the stewed tomatoes, Texas Pete hot sauce, and the rice (cos it’s cheap to make it last!) I never use turkey sausage—only local smoked pork sausage made in Conecuh County, Alabama. I usually use boneless chicken thighs instead of breasts. I make my own chicken broth, and it makes a big difference. I also add a pound of frozen okra. I know peeling shrimp is a pain, but it’s worth it!

World's Best Lasagna

This really came out well. I used scissors to cut the corners of the noodles off so they would fit in the crockpot better. I also added spinach as a layer and olives. My husband loved it and we ate off of it for a week!

Tuna Noodle Casserole from Scratch

This was the best tuna noodle casserole we've ever eaten. I did not salt it too heavily, and I did cut down on the butter a little bit. I doubled the peas and used baby bella mushrooms (on sale) and they were perfect in this dish. The extra sharp cheddar on the bread crumbs on top was fought over when this dish became leftovers! Very good!

Smoked Gouda Mac and Cheese

Gouda does not melt very easily so do shred well. I added powdered mustard for some zing, cheddar and Parmegean cheese to tone down the Gouda cheese. Added more flour to thicken up the milk, so I would reduce the amount of milk to 1.5 cups. Different spin on Mac & Cheese made this dish good.

Iced Tea I

This was good and easy, but for two quarts of tea I used three regular tea bags, added one cup of sugar and 1/3 cup lemon juice. Perfect!

Taco Seasoning I

Salsafied Chicken and Rice

Took away the rater's comments and woah, this dinner went over really well! Added more salsa, two tomatoes, a little water (since I used white rice, not instant), the Taco Seasoning I recipe seasonings and served in tortillas with sour cream, shredded cheddar and olives on top. A few bites and my husband said "Five Stars!" and "Make this again sometime!" Love that. Thanks.

Beer Butt Rosemary Chicken

Very good chicken! Very juicy. I added carrots and onion quarters to the bottom of the pan with the red potatoes and they all turned out well. After the chicken was picked and the veggies were taken out of the broth I put the carcass and broth into a crock pot with water to make fanstastic chicken stock for another recipe!

Fluffy Pancakes

Very good pancakes - very fluffy! You're right, they were GONE almost as soon as they hit the table! Just one suggestion that I like with pancakes is to add one tablespoon of lemon juice in the batter as I love that tangy taste. But the vinegar trick with the milk was great! Thanks for a great recipe!

Chicken Parmigiana

This was a great way to bake chicken parmigiana and it came out great! I agree with your reviews, that the bread crumbs neeed some spices, and the chicken should be brined, pounded flatter, floured and egg before breadcrumbs. This was a fantastic meal and everyone wanted seconds, so good thing I doubled the recipe!

Creole Red Beans and Rice

Very good except for the salt. I put in less than half required, and now I'm trying to soak up the salt with potatoes this morning! Too much salt! Also, I soaked the beans for two days, and then had to cook them on low in the crock pot overnight in order for the beans to soften up. 4 hours on low was not enough time for these beans. But overall great flavor in this dish.

This was great! So easy, thanks reviewers for the tips on baking and cutting and oiling. My first batch did not crisp enough, so the next day I just put them back in the oven again for six minutes and that made them perfect. My daughter loves the cinnamon and sugar kind.

Broccoli Fish Bake

This is very easy to change around to make it different every time by adding and subtracting. I made it with cream of mushroom and spinach and it came out really well. I will try it with broccoli next. I found though it would probably be better to wait to put the chees, bread crumbs and butter topping on in the last five minutes so it does not spread out all over the place. My husband gave it a 4.5 star, my son gave it a 3, but he's too picky. I gave it a 5. Good dish! Will make again!

Monkey Bread II

Really good !-- will wait to cool about 15 minutes next time before flipping on to a plate. The sugar ran all over the place. I did not have raisins on hand but I did use dried currants, which were good as well. I think I will cut down the cinnamon in the dough just a little bit, maybe add it to the sugar/butter to go on the outside instead? This did not last long in my house. My husband is an addict when it comes to sticky buns/sweet rolls!!

Down-Home Black-Eyed Peas

This was awesome-- so delicious and perfect for New Year's Day. I did read the comments and added 2 cans of stewed tomatoes, 1 tablespoon of brown sugar, 1/4 tsp of powdered garlic, 1/4 tsp of dry mustard. I used ham steaks cut up instead of a ham hock, and cut the salt in half. I also used two cans of blackeyed peas instead of dry. I recommend the frozen okra-- great touch. I put it all in the crock pot for 4 hours on high. It came out perfect.

Fruity Bundt Cake

Very good! A very moist cake. It was eaten quickly. I altered it of course because my picky family does not enjoy coconut or nuts. I subbed one cup of applesauce for oil and just put in 1/2 cup of oil. I added some chopped frozen strawberries and we liked that. I did cut down the sugar 1/2 cup in the batter but sprinkled some powdered sugar on the top of the cake. We loved all the fruit in it. It was a hit! Will make again!

Bacon Cheeseburger Meatloaf

Great idea to use the french fried onions in meatloaf. I did not use bacon, mayo, mustard or cheese, but substituted chicken Stove-Top stuffing in place of breadcrumbs. I also used Catalina dressing in place of ketchup, and put a layer of BBQ sauce on the top, but no matter. I made it a two lb. loaf, increased the temp to 375 for an hour, and it came out perfect. I just wanted to let you know you inspired me and I just had what was on hand to make this meatloaf a success! My family loved it!

Pizza Pasta

I made this as a treat on a Saturday night, and my family liked it, but not as much as pizza, so when we will eat a high-calorie meal such as this with very little nutrition, I will just give them pizza instead. It was a good thought, and a good try, but I won't be making this again.
