Easy Chicken Fajita Marinade

This was very easy and very tasty. I added some salt and used lemon juice instead of lime because that was all I had. Next time I will try lime juice and also add a couple teaspoons of cumin. The family ate every last bit.

Salisbury Steak with Mushrooms

Great recipe! I used frozen hamburger patties since I didn't want to split my 1lb of ground beef into 5ths for my family of 5, but otherwise followed the recipe. The family all said they wanted it again, which is the best way to tell if they liked it.

Very Easy Shrimp Dip

I mix all the ingredients together with a dollop of sour cream. It becomes a pretty pink dip that is much easier to scoop. I use frozen (thawed) salad shrimp and serve it with wheat thins. Love it!

Easy Cheesy Chicken I

My family loves this recipe. I've made it so often, I don't even have to look at the recipe. I usually add an extra can of cream of chicken soup, so it's extra saucy and some frozen vegetables about an hour before serving. Sometimes I'll add some shredded cheese with the sour cream at the end.

Empanadas

Yum! I refrigerated the dough overnight, so it was very hard when I took it out, but once it sat on the counter for about 30 minutes, it rolled out very easily. I would like the dough to be a bit sweeter, but with the cinnamon/sugar it was fine. I made 3 different kind using canned apple pie filling, canned strawberry pie filling and chocolate chips. I liked the apple best, but my kids liked the chocolate. I will be making these again.

Ice Cream Cake

This was a good starting point recipe. I made a devil's food cake mix in 2 round pans. The day before baking the cake, I filled the same cake pans (lined with plastic wrap) with softened chocolate oreo ice cream and froze them. The day after I baked the cakes I put an ice cream layer on top of each cake layer, for 2 separate cakes, wrapped them in plastic and put back in the freezer until serving time. I frosted each cake with cool whip and put rainbow sprinkles on top just before serving.

Ham Tetrazzini

Tasty. A great way to use up leftover ham from Easter dinner. I left out the parsley and pimentos and added frozen peas and carrots. I also used a full pound of spaghetti and 2 cans of soup. The family gobbled it up!

Florida Strawberry Muffins

These were delicious! I used strawberries I had picked and frozen last spring. When they were thawed, there was lots of juice, but I still added the 1/2cup sugar to the berries. I substituted cinnamon for the nutmeg. Next time I make these I would add 1/4 cup sugar and maybe put fancy sugar on the tops. They were done after 16 minutes in the oven.

Graham Cracker Crust

Tastes great! I softened the butter in the microwave for about 10 seconds and mixed it into the graham cracker crumbs and sugar with a pastry cutter. Very easy. I also put the crackers in a large ziploc bag and crushed with a rolling pin - easy and no mess.

Basic Cheesecake

This was first attempt at making a cheesecake. It was delicious! Even my father, who doesn't usually like cheesecake, thought it tasted great. I did get a large crack in it, though, while cooling it in the oven. I used a different graham cracker crust recipe because I didn't want the nuts and spices in it. I will definitely make this again.

Yummy! I think I'd add a bit more garlic powder next time. I brushed the tops with butter and minced garlic. The family loved them! Will definitely make again.

Tortellini Carbonara

Excellent! I used bacon, heavy cream and 1% milk. I also added some minced garlic and flour to help it thicken. I forgot the parmesan cheese, but no one missed it. Served with Cheddar Biscuits (also on this site). The family loved it.

Stir-Fried Sesame Asparagus

I made this today for Easter dinner, and everyone loved it. I didn't have peanut oil, so used olive oil instead. Also, used 3 cloves of garlic, chopped, instead of ginger, since I'm not a big fan of ginger. I'll make this again, but I'll cook the asparagus in the sesame oil for more flavor.
