Peanut Butter and Apple Sandwich

Finally, a sandwich that I can eat. I love apples, but unfortunately because of a denture problem, cannot eat them. I also love peanut butter. This is a perfect solution. No...applesauce does not fulfill the taste of a fresh apple.

To Die For Fettuccine Alfredo

Very similar to my own recipe. I like to serve this as a side dish with Chicken Parmigian. If you put both on a large plate,side by side, you get a delicious blending of the two sauces. This recipe is very good, no cornstarch needed

Stuffed Zucchini

Very good. When I make stuffed zuchnni, I hollow out the center, mix that part of the zuchinni in with the mixture and stuff the mixture in the centers of the zuchinni. A little extra work, but so good. I generally use Chuck chopped and a slightly different mixture and nothing but homemade sauce. Either way it's delicious.

Microwave Corn on the Cob

Sounds easy. I 've been leaving the corn in the husks, just removing the excess silk at the end of the corn. Nuke one ear 4 min. 2 ears 8 minutes. This method is very good too. Sometimes I would just leave only a couple layers of husk on, wrap them individually in paper towels and keep a few in the fridge ready to go. My husband aways enjoyed having one of these as a snack, fast & easy.

Cream Cheesy Cubed Zucchini with Lemon and Oregano

I followed the advise of some readers and cut the olive oil down to I TBS., then followed the recipe exactly. This is a delightful side dish, the creaminess of the cheese with the still almost firm zucchini made a nice blending of textures. It is very quick to make and I will make it again. I had it as a lunch with some sliced tomaties and was very satisfied. 7/12/12

Shrimp and Asparagus

I loved this recipe, but like most eveyone else cut the oil & butter in half. I cut the shrimp in a butterfly pattern and that made them really appear larger. Next time I will eliminate the lemon juice, that, to me, seemed like it gave a sweet taste to the dish. I served it over thick spaghetti and that, I thought, would be better than noodles. and it was. This is such a quick & easy dish to make. I think, like one reviewer said,, will sautee the mushrooms separately as well as the asparagus. with some mniced garlic.

Andrea's Pasta Fagioli

Pasta Fagioli is wonderful recipe to make especially during Lent. Sometimes I would chop raw onions and add it to the top of the soup, which only enhances the flavors. I've been making this soup for over 60 years. Don't forget the fresh Italian bread. This is a great recipe! I wanted to add that sometimes I used ceci beans and a speck of ground hot pepper flakes.

Nana's Mashed Turnip

My Mom used to make this recipe every Thanksgiving, we all loved it. I don't wait for the holidays to make it, it's a year round favorite, and yes the reviewers are rght, it has te a rutabaga.

Tomato Pork Loin Chops

I used to make this dish, but baked the pork chops in the oven, we were a family of seven, then removed excess grease then added the tomato mixture without the fennel.It was a favorite of our family. I used a can of whole tomatoes broken up by hand instead of the canned sauce and added !/2 a bay leaf. They liked having this with crispy homade fried potatoes, just remove the excees fat at the end. To make the pork chops stay flat I usually make a few small slits on the edges. Usually served a salad with it to complete the meal. I tried adding the fennel to half the recipe and that was tasty too. I am now a household of one, so I can make it in a skillet.

Basic Baked Spaghetti

I make this using homemade meat or regular sauce, I toss an bit a mozzarella cheese into the spaghetti & sauce, then top with more mozzarella cheese. I used to have a restaurant and this was one of our best sellers.
