Broccoli Cheese Cornbread

My family LOVED this. The only changes I made was I added a package of real bacon peices because my family loves bacon and omitted the salt because bacon peices are salty. I cut this into squares and we ate it for breakfast for a couple of days. (It reheats well!)

Banana Crumb Muffins

LOVE! This is a great way to use up over ripe bananas. I didn't have any brown sugar so I used white, it came out just fine!

Vegetable Filo Pie

The tase was great, I used 1 onino,1 sweet bell pepper and 3/4 lb of fresh green beans, 2 cloves of garlic and about 1 cup of leftover rotisserie chicken. Instead of steaming I sauteed everything first until almost done, then proceeded as written. My only complaint is that the phyllo dough didnt really have the texture I thought it would. The top layer was brown an flaky but the rest was like eating a stack of newspaper. Next time I will try to use a little butter or oil between the layers and see it that helps.

Apple Sausage Wagon Wheel

My family LOVED this. I made it exactly as written. The only problem I had was with the apples and the cooking time. The apples were making this so wet on the bottom that it took nearly an hour to cook. I will make it again but I will probably dice the apples and stir them in to distribute the juices more evenly, or perhaps sautee them.

Lamb Tagine

I liked it fine, couldn't get enough infact, but my husband and daughter couldn't handle the complexity I guess. Also a few of the ingredients were expensive and nearly impossile to find so I had to omit saffron and cardamon and substitute beef for lamb and regular tomato paste instead of sundried tomato paste. I live in a small town and they just dont carry those kind of ingredients around here. I also omitted the cayenne since I'm cooking for an 8 year old. I sould mention that we served it with the cucumber raita (even thought the dish was not hot/spicy (no cayenne) and some plain couscous.

Cucumber Raita

We had this with the Lamb Tagine (well, we made beef Tagine) and this was our favorite part. I will probably make this again to go with other recipies. Had to cut the recipe in half though because it makes a bit too much to be used as a condiment for just three people.

Oregon Salmon Patties

They tasted good, that is, the ones that didn't end up burnt on the outside and undercooked on the inside. I have never cooked with crisco shortening before but it burns really easily as I discovered. After I turned the heat way down it still burned up little bits that fell off so the last batch still had hurnedbits stuck to them. Next time I wil try with olive oil.

Classic Shepherd's Pie

Fantastic! My changes: I omitted rosemary (my husband hates it) but it probably would have been good :) . I did not have white potatoes so I used sweet potatoes. I used a can of tomato sauce instead of tomato juice and omitted the flour. I borrowed another reviewers idea and added cheddar to the top. It was amazing! Thanks for this great recipe!
