Chicken Parmesan
Great recipe. Chicken is very flavorful and moist. Added a little garlic powder to season the chicken. Only used 2 cups of panko bread crumbs with 1/2 cup of shredded parmesan and it was perfect proportions. 2 more cups of panko would of been a waste. Instead of using tomato sauce, I used marinara sauce. Made lots of the marinara sauce so that I could serve this along with a bed of spaghetti with sauce. Liked the idea of sifting the flour over the chicken. Will use that tip on future recipes! I ended up with 6 chicken cutlets. The breasts spread out when pounding, so, I cut them in half. Then, I also had two boneless skinless thighs as that is what my BF prefers. Turned out fabulous!

Manicotti Alla Romana
This was a hit! I read a lot of the reviews and decided to tweak it to our taste. Used fresh Hot Italian sausage with a bit of hamburger in it. Saved some of the meat mixture to put in the red sauce (my BF is a carnivore). Used a little less garlic (we love garlic, however, this seemed a little excessive). Put fresh grated parmigiano reggiano in the ricotta blend. Made a homemade alfredo sauce in exchange of the white sauce in this recipe. Then topped with fresh mozzarella. It was a labor of love and we enjoyed every bite!

Shrimp Scampi ala Norelllaura
My boyfriend and I were unimpressed as it was very bland in our opinion. I even added extra red bell pepper, garlic and butter to try to make it taste better plus some Italian Seasoning as one reviewer recommended. The recipe doesn't call for salt and pepper, however, I finally started adding some to try to make it tastier. My boyfriend said it could still stand more salt. Not sure why there is no salt and pepper in the recipe? It definitely has room for improvement. Pretty sure I won't try it again and will move on to another recipe.
