Beef Fillets With Stilton-Portobello Sauce

This was the first time I had ever made beef without just broiling it and pouring steak sauce on it . . . I can only say I wish I had tried something new sooner. Served it to family and everyone raved about how good it was. I absolutely loved it though I wasn't sure I would because I had never had blue cheese before. Used red wine, blue cheese and dried tarragon becuase I did not have fresh. Absolutely delectable!

Lobster and Chive Bisque

Great starter recipe. Scaled down to 4 servings. Used a whole cup of lobster tail meat. Substited half cup of milk for chicken broth and added a good splash of red wine, and substituted sliced onions for chopped green onions Added about a teaspoon of parlsey a quarter cup celery, half teasppon of cayenne pepper, and half teaspoon of paprika and two tablespoons of chopped garlic. Sauteed garlic and celery with onions and lobster. Also added a quarter cup od crushed tomatoes for color and flavor. Be sure to increase quantity of flour to insure proper consistency. Simmered for an hour to get good infusion of flavors! Also added one bay leave while simmering. Tasted wonderful. Enjoy!

Chicken Breasts Pierre

This was absolutely delicious! of course I added half a chopped white onion, and half of a chopped red pepper. I didn't have mustard pwder so i used half the amount of prepared mustard, and a dash of A1 sauce in place of trhe worchshire sauce. Also didn't have hot sauce so used a dash of cayenne pepper. came out DELICIOUS. gave some to my next door neighbor and he LOVED it as did everyone in my household. will definately be making again. served over white rice.

Cajun Catfish Supreme

My boyfriend and I absolutely adored this! Oh goodness it was sooooo good over herb rice! YUMMY!!!!! scaled down to four, didn't have cajun blackened seasoning so improvised by using regular cajun seasoning, a pinch each of thyme, garlic powder, paprika, onion powder, black and white pepper. did use cream of shrimp soup. It doesn't get much better than this. Next time i might add a bit more spice, leave out the catfish and add crab and. . . . it is so GOOD! thank you thank you thank you Lu Post!

Lobster Newburg

This was a delicious way to eat lobster. Perfect if you are looking for a change from steamed or grilled lobstertail. will definately be making again. Next time i might add a bit of flour or cornstarch in addition to the egg yolks to thicken it up a bit more to serve over pasta noodles. Yummy!

Chocolate Eclair Dessert

Simple, easy heaven! Halved recipe, used french vanilla pudding as suggested in other reviews, added a bit of cream cheese and touch of sourcream to give more of a cheesceake taste. Also, made homemade cream and whipped chocolate frosting with a little bit of milk for a a creamier topping. My three year old and my boyfriend love it!! DElISH! thanks Kristie.

Chicken Pot Pie II

This is an awesome chicken pot pie recipe, and I've tried A LOT! I didn't have any celery or mixed veggies, but it still turned out DELISH! I used a crust for the top and bottom. . . I used a basic pie crust recipe, added a little more butter/shortening so it would knead thin, added dried parsley and onion powder to the crust mix. I used some left over baked chicken I had from the night before, therefore I omitted the salt and pepper since the chicken was already seasoned. I used frozen corn, canned green beans and added mushrooms. I used 2% milk, and added sage and rosemary along with the thyme. For those of you who are getting a "watery" filling. . . make certain you are cooking the filling long enough for it to thicken. . . my filling came out superb using a lower fat milk (who needs the extra calories? lol) I will definately be making this again with fresh vegetables and celery!!!

Easy Chicken and Dumplings

This is a good base recipe. I finely chop an onion, and add some minced garlic and saute it with the celery. I also add thyme, and rosemary and make my own herb dumplings. If I have them on hand I also add frozen mixed vegetables. Thanx for the recipe.

Chicken Jambalaya I

This recipe was very good and fairly easy to make. I do not think I can say it is a true jambalaya . . . being that it has tomatoes it is more like a gumbo, but it is very good nonetheless. I didn't have any diced tomatoes so I substituted stewed tomatoes. Also didn't have hot sauce so instead I used cajun seasoning and red pepper flakes. I also found that i needed just a bit more liquid than was specified for the recipe, so I added a bit of white wine to the chicken broth. I also use geen onions or leeks when I have them on hand. Delicious.

Chicken Shepherd's Pie

This was the first time I had ever made a shepherd's pie as I do not care for ground beef too much. The chicken is a very nice change. Be sure not to over mix the potatoes so as to end up with a crisp topping.

Chantal's New York Cheesecake

This cheesecake is delicious. I do add a teaspoon of dried lemon rind and would advise to NOT use a graham cracker crust because of how long it has to cook ) I use a shortbread crust and it comes out perfectly!

Luscious Chicken Pot Pie

This was a very good basic recipe. I had some left over turkey breast so I used that instead of chicken. I didn't have two cans of Cream of Chicken soup, so I just used one and one can of cream of mushroom. I finely chopped half an onion and two stalks of celery and sauteed them in a couple tablespoons of butter until soft. I also added about 2 teaspoons of minced garlic. I added some thyme, rosemary, parsley and a touch of sage for added flavor. I also used frozen mixed vegetables instead of canned. Delicious!!

Ann's Shrimp Etouffee

Scaled down to four. Substituted a bit of white wine for water and cajun seasoning for salt and pepper. Lightly seasoned shrimp with seafood seasoning and added a 4 oz. can of diced tomatoes. Very good with brown rice. Boyfriend loved it and so did I. Definately a keeper! Thanks, Ann!

Apricot Chicken I

Good flavor, tender meat. Couldn't find russian dressing so used catalina as stated in other reviews. scaled down to three servings and used less onion soup mix, and dressing. Increased amount of apricot preserves. Also added a splash of orange juice to glaze mixture and lightly seasoned chicken with orange rind. Result was a sweet glaze witha slight kick. Delicious! Will definately make again. Thanks Shirley!

Shrimp Fettuccine Alfredo

I found this to be more of a starter recipe. added chopped red pepper, parley, oregano and basil. also used cream instead of half and half for a slighlty thicker and creamier sauce. delicious.

Penne with Shrimp

This recipe is a good base recipe. I added basil, oregano, and italian seasoning. I also added some sliced red, yellow and green peppers. I cook the sauce separately, and then add a bit of corn starch mixed in water to thicken. I've also used pre cooked shrimp. It has many possibilities. . . I usually just use what I have on hand, and it is good every time. It has become a repeat recipe in my house.
