Tasty Lentil Tacos

Fabulous. I doubled the recipe and did it just as it is written (except I threw in some zucchini to cook with the lentils). We ate it in soft tortillas instead because they're a little easier for my kids. Wonderful.

Lentil Quiche

Never would have thought to add lentils to a quiche but we loved it, with a few tweaks I learned from other reviewers. I sautéed the onions, along with some garlic to save time. I omitted the tomatoes, used asparagus instead of broccoli because that's what I had, at least doubled the Italian seasoning and added some nutmeg. The whole family loved it (husband, 6 yo and 3 yo). It filled one deep dish pie plate perfectly. I was a little leery of a crustless quiche but it set up nicely and didn't stick to the pie plate.

Best Fried Green Tomatoes

Followed exactly as written except used seasoned breadcrumbs, since that's what I had on hand. Scrumptious! Fried them in canola oil and topped with a bit if Parmesan cheese.

Tofu and Plantain Medley Veggie Patties

Made it tonight with a few changes just because of what I had on-hand. Used banana instead of plantain, didn't have any sun-dried tomato so, randomly, I used some capers. I also added some flaxseed meal (like I usually do with bread crumbs). Then I served it in a pita with plain greek yogurt and an orange sauce (1 cup OJ, 1 Tb sugar and 1 Tb cornstarch). It was delicious. My meat-loving hubby liked it too. Not hard to make although a bit time-consuming to fry up the patties. I'll definitely make it again.

Grilled Marinated Shrimp

I've made this over and over and over. I use cilantro instead of parsley. I usually cut the hot sauce in half because I serve it to my 4 year old and my toddler. They both love it. I also use ketchup instead of tomato paste because I don't like to open a can of paste just to use a little bit. I have cooked on the stove top in the oil marinade and it works great that way as well.

Vegetarian Sloppy Joes

Great! I used a full can of tomato sauce, as recommended, left out the cayenne pepper for the little ones (would have been even better with it) and used protein veggie crumbles instead of tempeh or beef. Turned out great. Just the right amount of "sloppiness".

Our Favorite Chocolate Cake

Very good and easy. I left out the coffee and it tasted great. I used it in a cake mold for my son's birthday party and it worked fine. The only reason I gave it 4 instead of 5 stars is that it was just a bit dry.

Mediterranean Baked Fish

Delicious! My three year old gave me a thumbs up and my fish-hating husband went back for seconds. I would have liked it with capers instead of the olives but I'm guessing the olives were what sealed the deal for my toddler. I used extra garlic like some of the suggestions recommended. I'll definitely make again. Update: I made it again with capers and it was delicious!

Black Bean, Sausage, and Sweet Potato Soup

We've made this soup many times and it's a hit with my family (including a picky husband and a three year old) every time. We've even served it to company and received rave reviews. The only change we make is to use smoked kielbasa instead of Italian sausage. It's scrumptious!
