Shepherd's Pie VI
Wow. We made this for supper last night and it was phenomenal! Would rate it a 6 star on a 5 star scale. There are so many variations you could make from the types of meat you use to the vegetables you add as well as the spices you use. Compared to the real deal in Scotland fixed with lamb, this is hands-down much better. My husband, who is the real cook in the family, keeps his mashed potatoes on the moist side with half and half and butter to avoid the dryness that can happen with Shepherds pie or any casserole for that matter. Of course this adds many calories as well. He made a huge casserole dish of this and it was all gone by the end of the meal. No leftovers to mess with, that's for sure! It says a lot when you can keep teen-age boys happy!

Absolutely Ultimate Potato Soup
I'm at a loss for words to describe how delicious this potato soup is. My oldest grandson who is 14 said "Ganny, this is the best!" You mean the best potato soup? "No the best soup I have ever eaten!" Our entire family loved it and are still raving about it. I'm afraid they're going to ask for it again soon and my only complaint is that it is NOT 10 minute prep time. With my husband and I both working steadily at the preparation and cooking, it took over two hours to prepare it but it was WELL worth it. I only wish I could take credit for it. We fixed it exactly according to the recipe and although I wouldn't change a thing, there are many substitutions and/or additions one could make depending on your tastes or your desire for fewer calories. But just know that it is GREAT just the way it is written. The only things we added were a little salt and pepper. Karena, I hope you have more recipes posted because I'm going looking for them right now.
