Grilled Eggplant and Tomato Sandwiches with Romano-Black Pepper Mayonnaise

This was a great recipe and a definite keeper. I bought a larger eggplant so I had to prep it first to get the bitter taste out (google "how to prepare eggplant"). I at this on a bagel sandwich thin and forgot to add the basil... It was still delicious! Simple, healthy & tasty. Thanks Bobby!

Lemon-Orange Orange Roughy

I really don't like fish but I loved this recipe. I used 1/2 a lemon and a navel orange! I'm definately making this again.

Curried Coconut Chicken

This was delicious! We used 2 Tbls of sugar instead of 3. We served over rice and had broccoli as a side. Left overs just as good too! MMMM! A definate keeper!

Tomato Chicken Parmesan

This was much better the second time I made it. I seasoned the chicken with Lawry's seasoning salt and pepper before browning it in the pan. That made all the difference in the world and the dish was fabulous!

Easy Caramelized Onion Pork Chops

We love this recipe. I've made it twice with two different cuts of chops and both turned out fabulous! The meat is moist and very flavorful. I did not end up using all of the salt and pepper mixture. I found that just seasoning the meat was enough for the recipe. I also had to take the lid off of the pan the last 1/2 of the recipe to get the liquid to reduce.

Penne Pasta with Mushroom Ragout

This was really good. I did not have the mushroom and cheese flavor. I used 2 tsp of dry mushroom gravy mix and actual cheese to replace the flavoring. The directions were not real clear. They did not indicate when to add the nutmeg and the list of ingredients failed to mention the 1/2 cup parmesan cheese and chives listed in the directions. Woops! I had to make it without chives but it was still really very good!

Almond Mandarin Salad

This was delicious! I will definately do this again. I used about 1/3 of a cup of packaged bacon bits to cut down on saturated fat and to avoid the clean up of cooking bacon! Thanks

Vegan Black Bean Soup

Garden Fresh Tomato Soup

This was very good. I used fresh parsley, fresh basil, garlic, bay leaf, thyme and milk. It was delicious. Will definately make again but try without the butter and flour to make it a little less fattening. This recipe would make a great addition to the "gourmet chicken sandwich" recipe...
