I'm from San Diego CA, and have been living in Spain for three years with my husband and his family. I love Spanish cooking and traditions, there's always a holiday to celebrate and a classic dish that goes with it. I couldn't have married into a better culture, I love to eat and I love to try news things. Never say you won't like something until you try it! I'm in love with Spain and I'm so happy to be a part of this culture.
My favorite things to cook
I like to make a lot of things, but I would have to say that making cookies and other deserts are very fun for me. I also like making soups and potajes, and anything healthy makes me happy.
My favorite family cooking traditions
I love that on Christmas eve, Christmas day, New year's eve and New year's day in Spain we cook a huge family meal, there are classics like "cocido" for Christmas but we also like to cook lamb over hot coals from a roaring fire in the fire place.
My cooking triumphs
Almost everything I ever tried to make for the first time has come out well! From cupcakes to pies and cultural cooking like Indian and Spanish, I think I capture the dishes as well as the people from the countries can make them.
My cooking tragedies
I have dropped half of my Spanish potato omelette (tortilla) on the floor once! And once I added too much water to a vegetable cream soup I was making, but so far, those are the only two. :-) Live and Learn!

Ghirardelli(R) Dark Chocolate Cupcakes
These cupcakes are amazing! Moist and chocolaty, I followed the recipe to a T, using strong espresso and Valor chocolate powder. It's the Spanish equivalent to Ghirardelli. My frosting is perfect and I don't even like frosting! Fantastico! If you love dark chocolate then this is the cupcake for you. Thank you for this recipe, this is going to be my chocolate cup cake recipe for years to come! :D

Grandma Ople's Apple Pie
FIVE STARS! This pie tasted like my grandmothers and I was almost crying at the first bite! I made this pie for my first ever pie on Thanksgiving for my family in Spain and it was beautiful. I used Ruth's Grandma's pie crust and I was very pleased with the results. This pie was not difficult to make and my family ate it up. I was so happy to make a delish pie from scratch! But yes, be sure to have your pie prepped before pouring the sauce. I made mine with the classic crust on top and before placing it I added the sauce on top of my apples, added the top crust and sealed and then I brushed the top of my pie with an egg wash and then topped it with cinnamon and sugar, baked 45 min at 350 degrees, it was perfectly cooked. :D

Wow! Just WOW! I love them, simple and delcious, I followed this simple recipe to a T and it´s fantastic! Thank you for helping me bring the holidays into my home, it finally feels like Christmas.
