Zucchini Cakes

Modified slightly based upon ingredients on hand: unseasoned bread crumbs, less Old Bay, Dijon vs. regular mustard, add parsley and onions. I also pan fried versus baked. Modified recipe follows: 2 cups shredded zucchini, 1 cup UNSEASONED bread crumbs, 1 egg, 1 T. mayo, 1 tsp. Dijon mustard, 3/4 T. Old Bay Seasoning, 2 T. onions, 1 tsp. parsley or fresh parsley Squeeze dry zucchini. Mix egg, onion, mayo, OLD Bay, mustard, and parsley in bowl. Add zucchini, bread crumbs, mix well. Shape into 8 patties, 1/4 c. each. Heat 1 T. oil in a large nonstick skillet on medium. Add 4 crab cakes. Cook 3 mins. per side or until golden brown. Drain on paper towels. Repeat with remaining patties, add oil as needed.

Blueberry Salad

Not a quick dessert. Needs time to set up. I refrigerated the jello/pineapple/blueberry combination overnight. 1. I used one 6 oz. package of raspberry jello. 2. I drained the pineapple for several hours and used the remaining pineapple juice with water to equal the 2 cups. 3. I added a can of blueberry pie filling, crushed pineapple, and one extra cup of fresh blueberries to the jello. 4. Refrigerate overnight. 5. Made the topping as directed. Garnished with blueberries. Great for a family reunion dessert or party.

Aimee's Mashed Cauliflower 'Potatoes'

I modified the recipe to use 4 cups cooked cauliflower, 1/2 c. Betty Crocker Butter and Herb mashed potato flakes, 1/2 c. milk, 4 tsp. margarine, 1/2 c. cheese. After boiling the cauliflower for approximately 8 minutes, I pureed it in my food processor then added the flakes, milk, and margarine; processed again then added the cheese. I did not take the extra time to bake the potatoes because my 2 year old niece wanted a taste and ended up eating two bowls. Four cups of cauliflower only made approximately three servings so I had to make a second batch immediately. Delicious! I didn't add salt or pepper due to the extra flavoring in the mashed potatoes. I will definitely make again!

Buffalo Chicken Salad

Used 2c. of leftover rotisserie chicken, 1/2 c. ranch and 1/2 c. Franks RedHot Buffalo Sauce. I didn't have green onion so I used white onion. YUMMY! Will definitely make again. Served with Romaine Lettuce. Blue Cheese crumbles on top would make it worth 5 stars!

Chuck's Favorite Mac and Cheese

The recipe calls for 8 oz. not a BOX of macaroni; my mistake but that's why it was dry and others rate it the same. I pureed the cottage cheese with 1/2 cup milk but it still wasn't creamy; probably because I used a box of macaroni and not 8 oz. I will try this recipe again.

Fire-Roasted Tomato and Spinach Pasta

Used two overly ripe tomatoes and a jar of pickled jalapeno juice, dried onion powder, and dried garlic powder; simmered then added the box of creamed spinach. Very good.

Banana Banana Bread

I added 1 tsp. vanilla. I poured the batter into a 12 cupcake pan. I baked it at 325 for approximately 30 minutes. Good but not sweet enough for our liking. Perhaps a brown sugar topping would make it five stars?

Grandma's Green Bean Casserole

Omit the salt otherwise too salty. One time I added 1 cup cheddar cheese to the green bean/sour cream mixture; the other time I didn't. Cheddar + green bean and sour cream mixture = no leftovers; the other time, the beans didn't look creamy so there were plenty of leftovers. I always use canned green beans not the French style. Yummy!

Spicy Bean Salsa

I used homemade Italian dressing; I didn't have a bottle on hand. I omitted the jalapenos since I didn't have any on hand and used garlic powder vs. salt. Marinated overnight. Received compliments but not sure I would make again.

Thanksgiving Leftover Casserole

Delicious! I used a 8x8 pan, 2 cups of leftover turkey, one can of evaporated milk, 1 c. water and 3T butter and 2T flour. I also sautéed 1/2 of an onion and a few stalks of celery in butter for added flavor. I have used leftover mashed potatoes before and added an instant cup of prepared mashed potatoes to make 1+ cups of mashed potatoes. Today, I boiled four small/medium sized potatoes and added a little milk and butter. For the topping, I used dried white bread crumbs and Ritz crackers. I added garlic powder to the overall mixture and a little of seasoning salt. This recipe is perfect for leftovers and so easy to adapt. One of my favorites!!!

Sloppy Joes II

I used leftover turkey vs. ground beef. Otherwise, I didn't change the recipe. A little sweet too sweet for us. Perhaps vinegar or Worcestershire sauce would make it five stars. I put everything in a mini-crockpot and cooked for hours. Yummy!

Breakfast Casserole III

Loved it! Made half the recipe in an 8x8 pan for two people. I baked the potatoes as directed and I'm glad I did...it was a great foundation for a casserole that I let sit in the fridge overnight. I didn't have sausage so I used ground beef and added garlic powder for flavor. I used eight eggs; enough to cover the casserole and the cook time was longer than stated--approximately 40-45 minutes or until the eggs were set. We loved it and the leftovers were delicious too! A definite keeper!

Baked Spaghetti

I made half of the recipe and put it in the fridge overnight. Don't over cook the pasta. I didn't have enough cottage cheese so I used sour cream (3/1 ratio) to meet the recipe requirements. Only one layer and the last layer was the mozzarella cheese. YUMMY!

Best Bruschetta Ever

Added onions and used garlic powder. Let it sit overnight and then added balsamic vinegar the next day for more flavor. Easy recipe but needs to adjusted to ones preferences.

I use Pam Olive Oil Spray versus olive oil. No more than ten minutes. Make sure you put the same size of leaves on the tray together otherwise you will get burnt ones...

Classic Rice Pilaf

So easy to make! I used homemade vegetable stock versus chicken stock which didn't have any salt added. I also didn't have the saffron. Although it takes a while to cook, it is a truly simple and easy recipe to make. This rice is great with a crockpot chicken.

Ground Beef and Rice with Cheese

I used long grain rice and it was horrible, tough, pellets! Use minute rice. I tried to salvage the recipe by using a Progresso tomato soup which has more moisture than a condensed soup but the rice was still though after another 30 minutes. After using another can of Progresso soup, and more time on the stovetop, it was edible but not great. Perhaps it would be better with minute rice but I won't try this again.

Orange Cream Fruit Salad

Delicious! I use sugar free vanilla pudding (1 oz.) vs. the 3.5 stated in the recipe. I rinse and drain all the canned fruit in my salad spinner adding the oranges last. I mix the vanilla pudding, 1 cup milk, and 1/2 cup light sour cream, and 1/3 c. OJ concentrate and refrigerate overnight. I refrigerate the canned fruit overnight and drain the extra juice the following morning. Mix the canned fruit and dressing together. Soak the bananas and apples in the pineapple juice and add to the salad before serving--the bananas do not keep well in the salad. Maraschino cherries are an excellent addition to the salad but they must be drained and rinsed separate from the other canned fruit otherwise the pineapple will turn pink. Loved by everyone! Thanks!

Hamburger Casserole

I didn't have the canned chili and celery so I omitted them. I used 7 oz. of macaroni noodles which I had on hand and cooked for six minutes. The lack of chili made the recipe look dry so I added one 8 oz. can of tomato sauce and 1/2 c. hot salsa vs. 1/4 c. salsa. If you heat the ingredients on the stove, as directed, bake at 250 otherwise bake at 350 as recommended by others. Following the recipe instructions is the key to the bake time. With the addition of tomato sauce, I also added a 1-2 cloves of minced jarred garlic for additional flavor. I warmed in the oven then added cheese during the last five minutes of the bake time. The kids loved it!
