Chocolate Chocolate Chip Cookies I

All loved this recipe. Followed exactly except used Hershey 's special dark cocoa powder and Hershey 's special dark chips. Accidentally baked first batch at 370 (didn't have glasses on). Still turned out. Refrigerated all but first batch and only for length of time prior batch was in oven. Will definitely do again. Would love to try with little instant coffee.

Farmer's Casserole

Very yummy and easy. I used russet potatoes, cubed quite small, since used what was on hand. Doubled recipe as well. So changes were....6 c. of cubed russet potatoes, 1.5 c. of shredded cheddar, 1.5 c. chopped ham steak, 1/2 c. Vidalia onion finely chopped, 1 clove of garlic finely chopped, 8 eggs, 12 oz. heavy cream, 12 oz. 1% milk, 1/2 tsp cayenne pepper, kosher salt. I did saute the onion and garlic in butter before adding to casserole. It came out delicious. Would like to try with pepper jack cheese next time. One note: if using fresh potatoes, chop small or will not cook enough by time egg is cooked.

Mom's Ginger Snaps

Very quick and easy to make. Yummy the day made but become harder next day (just the way we like them!). Doubled the cloves, cinnamon & ginger per other users; substituted approx. 1/2 c. coconut oil then topped off with canola oil to make 2/3 c. of oil; used dark brown sugar. Did NOT put the decorator sugar on the cookies. Next time will try with half whole wheat flour. This is now one of my fave cookie recipes. Love that I can make them spur of the moment.

Easy Marinated Pork Tenderloin

Whole family loved this recipe. Very fast to prepare--prepped in the morning before work, kept in fridge until time to bake for dinner. Loved, loved, loved this one!!!

Mom's Zucchini Bread

One of the better zucchini bread recipes I have tried. Made a few changes: instead of 3 c. flour, used 1.5 c of whole wheat flour, 1 c. flour, .5. flax seeds. Also used a little less than 1 c. of sugar. So delicious and makes 2 loaves.

Roasted Chickpeas

Changed it up a little: 1 Tbl of olive oil, sprinkled with Tony Cacherie's Cajun seasoning. Cooked in toaster oven at 400 degrees for 40 minutes. Very yummy!

Spicy Garlic Lime Chicken

Absolutely delicious. Hubby put it up there with our favorite restaurant's chicken dish. Changes were 3 large breasts cut in half, less than 1 tsp of garlic powder at end (would increase next time), extra sprinkling of paprika at end (would increase initial amt to at least 1/2 tsp), 3 Tbsp of chicken broth added to lime juice for sauce.
