Chicken Meatball Soup

I made this soup for supper tonight, with a few changes, and it was very good. I did not have parsnips, but I did have a zucchini, so I quartered and sliced it and substituted it for the parsnip. Also, did not have egg noodles, so I added some rice (a little less than one cup) right to the soup. My kids loved the meatballs! I will use a little less pepper next time in the meat mixture. And I'll try it with the noodles and parsnips, too! Seems pretty versatile. Thanks!

Italian Sausage and Zucchini

This was very good, especially with all the veggies doubled. I doubled all the ingredients except the sausage, and it was wonderful. The sausage took longer than expected to become no longer pink, and I cut it up before I should have, so it was a little squishy when I cut it. I'll let it cook longer next time before cutting it. Thanks for a great way to use up summer sqaush!

Barbie's Tuna Salad

My family did not like this recipe "as is". My husband complained of heartburn all evening! Even though I cut back on the mayo, it was far too wet for us. And I thought the sweet pickle relish made the salad too sweet. I may experiment with this again using even less mayo, fresh onion and parsley instead of dried, and no sweet relish (maybe dill relish would work??)

Grandpop's Special Chocolate Cake

I made this for my husband's birthday 3 days ago and the cake is still moist and delicious. Try it with a homemade cream cheese icing....YUM!********** Update (12-2-10): Four years later, this has become my "go to" chocolate cake recipe. My kids ALWAYS request it (with homemade cocoa icing) for every birthday. I've made it over and over, and only once did it "fall", and that was when I switched brands of flour. Needless to say, I ditched that flour and went back to my old brand. Perfect chocolate cake!

Awesome Ham Pasta Salad

Wow! I just made this, and I don't think I'll be able to let it sit overnight! It's delicious! I used leftover Easter ham, small shell pasta, and 1/2 red onion. Also, I used 2 Tablespoons sweet pickle relish and 2 Tablespoons dill relish (since sweet pickles are not our favorite.) This is a winner, and can be easily adapted....may add shredded carrots, etc. next time.

Delicious Ham and Potato Soup

This was good, but too peppery. Next time I will cut down on the white pepper at least by half. I used chicken broth instead of the water and bouillon.

Lemon Bundt Cake

I'm not sure what happened, but when I pulled the cake out to check it after 35 minutes, it "fell"....the middle sank. I had to bake it about 20 minutes longer. I'm giving it 3 stars, because the flavor was good, but I won't make it again.

Whole Wheat Banana Nut Bread

I really like this bread, but my husband hates it. "This is NOT your usual recipe, is it?", he asked. Granted, it doesn't taste like regular (and unhealthful) banana bread, but I like the grainy testure of whole wheat. I will make it again, but I'll probably have to eat it all by myself. Hopefully, it will freeze well. Thanks!

Slow Cooker Barbeque

My husband ate 4 sandwiches of this beef tonight....I couldn't believe it! This is very easy to make. The only change I made was to add 1 cup of water after 2-3 hours of cooking, because it looked very dry, and I was afraid it would burn.

Chicken and Biscuit Casserole

This was excellent! I used leftover chicken, and only had 3 cups, but it was fine. Next time, I may use frozen peas instead of canned, and perhaps add a few more carrots. The biscuit dough was a little hard to handle (sticky!), but definitely worth the effort. YUM!!

Chewy Coconut Cookies

These are very good. Very buttery. I used fresh coconut that I grated. (Unfortunately, my son doesn't like them, so I'll have to give most of them away so I won't eat them all!) The batch made about 30 cookies.

Italian Breaded Pork Chops

Although I liked the simplicity of this recipe, my chops were rather tough. I halved the egg and bread crumb mixture, and still had lots left over that I had to throw out. I don't think I'll make this again.

Grandma's Peach French Toast

This was very good, but I also added 1 cup of milk to the egg mixture. (Next time, I will use 6 eggs and 1 1/2 cups of milk!) I baked it COVERED and longer than the recipe called for. My 3 year old loved it. I nice change from our traditional egg and sausage casserole.

Lemon Ginger Shrimp

Brown Family's Favorite Pumpkin Pie

I think I should have baked this a little longer than 40 minutes after adding the topping. It wasn't quite as firm as it should have been, but it was delicious. We ate it warm the first night, but it was even better the next day.

Chocolate Chip Pumpkin Cookies

These are interesting "cookies". My 2 year old and I liked them, but my husband hates them. He wouldn't even finish the one he tastes. I substituted 1 1/2 tsp. pumpkin pie spice for the cinnamon and nutmeg and added 1/4 more chocoloate chips. I probably won't make again, unless I get some rave reviews from friends that I share these with......my son and I can't possibly eat them ALL.

This is delicious!! Next time, I'll just add an extra tablespoon or two to the whole thing, and forget able the layered effect, which didn't work too well for me. And I know there'll be a next time!

Chicken Milano

I made this tonight for dinner with friends. It was very tasty! I doubled the sauce, cut the chicken into strips before sauteing, and used half and half instead of heavy cream. I thickened the sauce with a bit of cornstarch, and served over spinach fettucine. Everyone enjoyed it. Thanks for sharing!

Banana Wheat Bread

I made this a couple of times as a loaf of bread, but then decided to try it as muffins. I'm not sure why, but I like the muffins MUCH better! My 2 1/2 year old loves them, too.
