Cha Cha's White Chicken Chili

I would have given this recipe 5 stars, except I made a few changes! I agree with the other reviews that this was going to be super spicy so I changed it up a bit so the entire family would enjoy. Instead of preparing it like the directions, I used the crockpot instead! I threw in 2 frozen chicken breasts (you can put in thaw uncooked chicken to speed up time), 1 can of corn (drained), 2 cans of white beans, 1 can of white kidney beans, 1 can (4oz.) green chiles, 1 can of chicken broth (I found it was too soupy with 2 cans of broth, but just my preference), half of an onion (diced), 3 cloves garlic (minced), 2 tsp cumin, 1 tsp cayenne pepper, 1 tsp oregano, salt/pepper to taste. I put the crockpot on for 6 hours (high) and then shredded the chicken 30 mins before serving. It was so delicious!!! Certainly will be a regular at our house.

Spicy Avocado Chicken

I would have given this dish 5 stars but I made two big changes that I think added to the flavor. I agree with some other reviews that the ratio of avocado and onion seemed wrong. I had way too much onion for the garnish, and had to scoop about 1 cup of it out to have a better ratio. Next time I will increase the amount of avocado or decrease the amount of onion. The second big change was adding bacon. My husband and I first thought the picture on this recipe had bacon in it...and then decided that sounded great! So we cooked about five pieces of bacon and broke it up into little pieces, added it to the garnish and served. We also decided to grill the chicken (to save some time), which turned out awesome!! It added a perfect amount of salt to compliment the spice. Great dish and I will make this again!

Chicken Caesar Pitas

This has quickly become a summer family favorite. When I first started the recipe, cooking the chicken according to the instructions seemed strange. It ended coming out great and helped with some time management (and heating up the kitchen) when I skipped a few steps and purchased caesar croutons instead of making them from scratch and used bacon bits. We also used wheat wraps instead of pita bread, but they are delicious!

Chicken Quesadillas

So good!! This was an amazing dish and the entire family loved it. It was so simple and easy to make...I agree with the other reviews about brushing oil on the bottom of the tortillas when putting them in the oven. I also used the Mexican cheese blend which tasted delicious...will definitely make this again!

Simple Whole Roasted Chicken

My husband calls this the "homerun" of chicken. This is hands down the most delicious and amazingly moist recipe I have ever made! I usually change up recipes a little but this one is absolutely fantastic as is. As shared by previous reviews, I was nervous to put cinnamon and sugar on chicken...but WOW! This has become a family favorite and will certainly make time and time again :-)

Pot Roast Dips

This was very tasty!! The only reason why I didn't give it 5 stars was that I added 1 cup beef broth as well as 1 cup water. Even though I heated the sandwich to melt the cheese, I will be using mozzarella slices instead of shredded mozzarella. The shredded pieces (they didn't all melt in the microwave) kept falling in the sauce when I would dip the sandwich. The taste was very delicious and I will be making this again soon!

Almond Crunch Granola

This was my first attempt at homemade granola, and it was a hit! The only reason why I didn't give it 5 stars was because I haven't quite mastered the "chunky" effect for my granola. I didn't realize how much more it would chunk together as it cooled, so I added additional honey/oil to help with the bunching. It was a little too sticky and I will be trying this again with no additional honey - just letting the granola cool! I had also taken the advice of some other reviewers and added raisins and brown sugar. Delicious!

Awesome Slow Cooker Pot Roast

FINALLY! Is what my husband said when he tasted this pot roast. We have been trying to find a recipe that does not dry out the roast and leaves it tasting moist and tender. This was the first time we have been able to enjoy a yummy roast! It was absolutely delicious and I will be making this again. It has made me a believer in pot roast again :-)

Slow Cooker Chicken and Dumplings

HOMERUN! I was a little nervous making this dish, having never made dumplings before. But it was so good! I followed the other reviewers advice and used chicken broth instead of water and I also added 1 can of corn, 1 can of green beans (drained both) and chopped up some carrots. I may try fresh veggies next time. For some additional flavor, I added some pepper, salt, minced onion and garlic powder. I also put the chicken in frozen and pulled it apart about 4-5 hours into it cooking. The dumplings were great cut into quarters and cooked wonderfully when I turned the crock pot up for the last 1.5 hours. I did have to add some flour to bulk up the liquid...but it was yummers!

Bacon Jack Chicken Sandwich

This was amazing! While my husband loves Monterey Jack cheese, I am more of a Mozzarella girl. I loved how the cheese worked on my sandwich, and it still tasted so delicious! Adding the dill pickle slices really topped off the flavor. On a warm summer night, it was nice to not heat up the kitchen too much and we love using our grill. I will definitely be making these easy sandwiches again!

Homefried Potatoes with Garlic and Bacon

WOW...these are great. My husband was certain that anything cooked in bacon drippings wouldn't disappoint....and he was right! They didn't taste oily or horribly bad for you, just melted in your mouth. To help with calories, I cut the bacon suggestion in half as well as the garlic seasoning. It was just too much garlic! Overall these potatoes were a hit and everyone wanted more when they were gone. Will certainly make again!

Slow Cooker Chicken Taco Soup

EXCELLENT! I loved this dish. I also used ground beef and beef broth instead of chicken and beer. I added the additional spices recommended by a previous reviewer (cumin, cayenne pepper, chili powder, red pepper). It was so good! I can't wait to try it again...maybe this time with chicken :-)

Stuffed Green Peppers I

Great dish and really easy to make. I totally agree with the comment to add 1 can of diced tomatoes instead of dicing your own! I would also add to sprinkle the cheese on top of the tomato sauce...otherwise how can you see it bubbling? Great dish! With certainly make again.

Baked Teriyaki Chicken

I love this dish! I certainly agree with doubling the sauce...there just wasn't enough to brush on every 10 minutes. How good is it? I caught my husband in the kitchen licking the pan!! Enjoy!
