I would have given this recipe 5 stars, except I made a few changes! I agree with the other reviews that this was going to be super spicy so I changed it up a bit so the entire family would enjoy. Instead of preparing it like the directions, I used the crockpot instead! I threw in 2 frozen chicken breasts (you can put in thaw uncooked chicken to speed up time), 1 can of corn (drained), 2 cans of white beans, 1 can of white kidney beans, 1 can (4oz.) green chiles, 1 can of chicken broth (I found it was too soupy with 2 cans of broth, but just my preference), half of an onion (diced), 3 cloves garlic (minced), 2 tsp cumin, 1 tsp cayenne pepper, 1 tsp oregano, salt/pepper to taste. I put the crockpot on for 6 hours (high) and then shredded the chicken 30 mins before serving. It was so delicious!!! Certainly will be a regular at our house.
