Loaded Mashed Potato Cakes
I make these all the time, minus the celery, and they always turn out beautifully. For those that say they are mushy or doughy, you're probably cooking them on too high of heat. Mine take approximately 5-6 minutes per side and they get fluffy inside and crisp outside. Do not reduce flour or egg, they act as binders and reducing them means your potato cakes with disintegrate as you cook them.

Shredded Tri-Tip for Tacos in the Slow Cooker
Amazing and for those who complain about the spiciness of this recipe, cayenne and ancho chiles are hot and this is well known so just don't add them or minimize the amount. You can even substitute your favorite taco seasoning for the seasonings in the recipe to avoid it being too spicy. It seems very rude to give a low rating because you don't comprehend the heat index of specific peppers you are working with.

Bacon Roasted Chicken
I do this to chicken and turkey, but I run my hand under the skin to loosen it then lay bacon under the skin in an even layer, gives the chicken or turkey a lightly smoked and juicy flavor and the skin is so beautiful, it looks like a magazine cover.
