Lemon-Buttermilk Pound Cake with Aunt Evelyn's Lemon Glaze

Delicious! I made it vegan by substituting eggs with flax "egg" (1 tbl flax + 2 tbl water for each egg called for), milk used was almond with 1 tbl apple cider vinegar, and coconut oil for butter, plus vegan sugar. I also made it gluten free with Bob's Red Mill all purpose gf flour. Cake was perfect...crusty on the outside and tender on the inside. Glad I tried it!

Vegan Banana Blueberry Muffins

Very good! I doubled the recipe for all 7 of us and I had to change the recipe a little to suit our dietary needs...here is what I did to make our muffins gluten free/vegan. I used Bob's Red Mill g/f all purpose flour for the a/p four, and ground oats for wheat pastry flour, 3 ripe bananas (since many comments said batter was too dry and original doubled recipe called for 4), 1 cup of non dairy milk (I used soy), for egg replacer I used freshly ground flax seed (2tbl) with the 1/4c of water (let it sit till it gets thick and gels). I also used organic cane sugar, but that doesn't affect taste. These are very tasty...everyone loved them! I will probably make more this weekend and freeze them to keep on hand for fast breakfasts.

Potato Donut Holes

Delicious!! I make these vegan and gluten free and they still turn out great! The modifications that I make are: 1/2 oat flour (or ground oatmeal in my Vitamix), 1/2 Bob's Red Mill all purpose g/f flour, ground flax seed/water mixture for eggs, organic cane sugar for white sugar, and sour almond milk for buttermilk. I rolled the holes in cinammon and sugar when they were done and everyone loved them!

Zucchini Brownies

Wonderful brownies! I make these vegan and gluten free, so there are a few modifications, but the rest of the recipe I keep the same. I use 1/2 ground oat flour 1/2 Bob's Red Mill g/f all purpose flour, organic cane sugar, and coconut oil. Make sure to follow another posters advice in letting your zucchini sweat before mixing. I also turn up the heat to 375 in the last 10 minutes to get them a little crisper..we have a gas convection, so your's might not need it. Hope you ejoy them as much as we have!
