Fettuccine with Sweet Pepper-Cayenne Sauce

Enjoyable. A few notes however. 1. I think onions were needed. I added a medium onion, cut in half and thin sliced (maybe just a bit less of medium); but, I think it needed the flavor. I sauteed that with the red pepper. 2. I did use olive oil vs a spray, it needed that little bit of fat. 3. Garlic, I did add more; the recipe WAS FINE as is; just a personal taste, I love garlic. NOT necessary to add more. 4. THE SAUCE IS NOT RUNNY, it is just fine 5. I do NOT add the sour cream with the broth to simmer. Sour Cream should NOT be cooked. Add the broth, reduce the heat to low, and simmer 5 minutes until it reduces slightly. Remove from the heat, then add in the sour cream and mix to combine. The heat will warm it right up. 6. Toss with the pasta, however; it does need something green. I added plenty of fresh parsley and fresh basil. 7. Tasty good as is. But, I added chicken to make it a complete meal. I had grilled some chicken before, and thin sliced. It was excellent tossed with the pasta. The second time I made it, I didn't add chicken, but added 1 1/2 cup sliced mushrooms which I sauteed with the peppers and onions. Both were very good. The recipe is very good

Broccoli Chicken Casserole I

I saw the recipe pop up today on the allrecipes email and I just had to mention; I made this a couple of months ago for friends. They love casseroles and she had just come home from the hospital, so I wanted to make something easy she and the kids would enjoy. I had to laugh at some of the reviews where people didn't like it; as they clearly didn't read the recipe or follow the directions. It turns out very nice. Just as it should. My tweaks just for my tastes but are not necessary. I poached my chicken breasts in a herb broth which just gave it a bit more flavor; but again, basically the same thing. And cutting it in cubes or shredded; it comes out the same Make sure NOT to over cook the broccoli; but the chef did note that I used the low salt soup, just because I like to season my own food For the cheese I used a cheddar/montery jack blend; but again, you couldn't tell the difference I did season with plenty of pepper. And for the stuffing mix, I used Stove Top in the Canister; the Herb Blend One Suggestion: I may add a small onion diced next time ----------------------------- As you can see, none of my tweaks changed the taste of the dish or the texture; just a couple of personal preferences as well. It is a very nice easy recipe; and is very reliable, but as one poster said. If you are going to change everything and then don't give it a fair rating - that isn't right. Rate the recipe as is written. If you change every item, it isn't a fair review, IMO.

Best Egg Rolls

Easy recipe; but extremely bland. The balance of ingredients were nice; but not the flavor. A couple of notes. I used fresh rather than ground ginger and ground garlic.. Also, I added hoisin, sesame oil, and a dash of fish sauce. Also, using fresh ginger and garlic; I added a lot more. I tasted the pork and continually added the ingredients until I got a nice flavor. One tip that I like to do is that the pork should be rendered very slowly, so it doesn't dry out. I cooked the pork in just a bit of water, simmer slowly. The water evaporates, but leaves you with a very fine moist ground pork. It is a nice recipe for ease; but extremely BORING in flavor

Garlic Chicken with Orzo Noodles

I loved all the ingredients; but very very bland. This was a dish I made because I had everything on hand; but I had to add way more seasoning, garlic, etc. It was just a very bland dish

Alfredo Sauce

For those who say it is grainy. USE fresh parmesan and grate it yourself and make sure the heat is not too high. Use heavy cream and REAL butter, not margarine And for flavor, this is a sauce. The basic sauce is cheese and cream, if you want more flavor, add what you like. I thought the sauce was perfect. Creamy, I heat on low and simmer slowly to melt slowly. It came out creamy and perfect and easy to prepare. No problems what so ever. I season with salt and pepper after it is done before I toss or serve it. I like to season accordingly to what I am serving it with.
