Boilermaker Tailgate Chili

I thought this was really good, however I prefer my own chili much more due to similar flavor but much more simplicity. Very good recipe though.

Best Big, Fat, Chewy Chocolate Chip Cookie

Very good! The only thing I did different was use chocolate chunks instead of chocolate chips because I always prefer those. I am not a huge plain old chocolate chip cookie fan. I like other stuff in with them, so next time I would like to do half chocolate chunks and half chopped peanut butter cups...that would be perfect to me! I'd also like to do half whole wheat flour also. Very good recipe and the name of these defines them well!!

Burrito Pie

YUM!!! So good! I used a little less than 2lbs. of meat (1.65 I believe) and I was able to fit everything in one 9x13. I also added a packet of taco seasoning and more cheese and for the beans I put half of them in the meat mixture and half I spread over the tortillas. Other than that I pretty much followed the recipe as is. Took it to a party and everyone loved it up. Definitely a keeper.

Lola's Horchata

Wonderful!! I did, however, follow a few reviewers suggestions and I also changed the servings to 10 since I needed a larger amount for a party. I found that the flavor was better the longer it sat, so I served it the following day. There was a lot of undissolved cinnamon, but I found the perfect solution to be straining the entire mixture through a coffee filter just before serving. Because it sat overnight, the flavor was still full, but you did not get mouth-fulls of undissolved cinnamon with each sip. What I consider the perfect measurements for 10 servings is the following: 1-2/3c uncooked white long-grain rice; 8c water; 1/2c sugar; 1-1/2t ground cinnamon; 2c milk; 3/4c+2T sweetened condensed milk; 2-1/2t vanilla extract. Fabulous!!

Spinach and Mushroom Quesadillas

These were pretty good. I like the general concept, but I think I'd play around with it a little bit. The garlic flavor was a bit overwhelming for me. I love the sauteed mushrooms and spinach though. I'll definitely make this again, but probably with less garlic and some added seasonings or so. Good recipe to start with though!

Outrageous Chocolate Chip Cookies

Really good!!! I used chocolate chunks instead of chocolate chips, which I prefer. But other than that I followed the recipe exactly. Next time I may do 1/2c. of chocolate chunks and 1/2c. of cut up peanut butter cups instead of the 1c. chocolate chips. I think peanut butter cups would be excellent in these. Mmmmm. Perfectly soft and great flavor!

Sweet Restaurant Slaw

Really good, but I definitely cut the sugar in half. I also only used a 14oz bag because that was all our store had, but we liked the amount of "sauce" with the amount of coleslaw mix...nice and wet. EDIT: Also delish with some cashews and mandarin oranges tossed in as a side to a tenderloin, etc.

Garlic Chicken Fried Chicken

Very good!!! Breading wise this was the best breading recipe I've found. It actually sticks and it's crispy...both things we love! We pounded 2 large breasts and cut them each in half to get 4 good size pieces. The flavor was great, although personally we would probably like a little stronger of a flavor. It wasn't bland, just not quite as flavorful as we desire. We dipped it in ranch too, which was good. Served it with a salad and couscous. Yum!!! Some things we talked about trying next time: adding some hot sauce or buffalo sauce to the egg/milk mix and/or adding either some dry mustard or some cayenne to the breading mixture. Another idea we had was to add some dry ranch (not with the other ideas listed above though).

Chocolate Frosting I

I thought this was ok. I frosted the Too Much Chocolate Cake with it and it tasted great the first day, but by the next day it had turned pretty hard and dry. I definitely wouldn't make it again. Next time I'll either try another recipe or just use a pre-made frosting for a creamier result.

Too Much Chocolate Cake

I made this exactly as the recipe called for except that I did two round cakes for a layered cake and I used mini chips instead of regular. It turned out really good and was very moist. We loved it. However, it was not nearly as moist the following day, which was disappointing. So while we all thought this was awesome the first day, we all definitely thought it was a "day of" cake. I frosted it with the Chocolate Frosting I and found the same results. It was good the day I made it, but the frosting got hard the following day. I definitely wouldn't use the frosting again, but would make the cake again. I would just serve the cake only the day it is baked.

Tex-Mex Burger with Cajun Mayo

Loved these!! Very moist and very flavorful. I used some onion powder instead of onion because I don't like biting into onion, but other than that followed the recipe exactly. We love spicy, so next time I will add another jalepeno. We also topped our burgers with homemade guacamole. Definitely adding these to my recipe book!! They were fabulous!!!

Greek Pasta Salad I

Very good! I made it the night before and by the next day it tasted just right. I did add a bit of italian dressing in, simply because I love that flavor. EDIT: Made this again today and thought I'd try the half balsamic vinegar/half white wine vinegar combo that many spoke of. While I thought the flavor was good, I definitely felt like it was too overpowering. I think next time I may either stick with the red wine or use mostly red wine with a bit of balsamic.

WOW!!! This was SOOO good. To be completely honest, while it was simmering I was getting a little bummed because I didn't think it smelled all that great, but we just got done with dinner and my husband and I both absolutely loved it!! I already just sat down to write it on a recipe card with a few of my personal preferences. Definitely a 5-star. One note: this NEEDS to be topped with the Parmesan. Without it, it would not have been near as good. It's vital to the perfect flavor. My adjustments...I doubled the chicken broth, only did 1 zucchini, but added 1 yellow squash, added 2 cans of Rotel tomatoes and some creole seasoning and cayenne for a kick. I used dried herbs because that's what I had. I did not add the wine, simply because I didn't want to buy any today. I didn't feel like the soup was missing anything without it. Absolutely perfect! I will make it exactly the same way next time!

Annie's Fruit Salsa and Cinnamon Chips

YUM!! Loved it even more this time than last. I used Gala apples, which were delicious and I added them last to prevent browning. For the preserves I used peach, which was great. Next time I think I'll only do 1Tbs. of each sugar. It was certainly sweet enough between the fruit, sugar, preserves and chips. For the tortillas I used fresh tortillas from our local Mexican market (16-perfect amount) and they made absolutely delicious chips. I did find that the baking time was a little longer than noted and they needed to be flipped half way through for the best crisping. While they were much better than store bought, they did take a lot of time but are definitely worth the time if you have it! I will say that an egg slicer would make the chopping of the fruit much much quicker! By far my favorite fruit salsa recipe.

eh...ok. I've had much better. In fact I've made a lot better just throwing together a bunch of stuff I have on hand impromtu. I definitely did not like the large cottage cheese curds either. I won't make this again. Bummer.

Tiramisu Toffee Dessert

very good!! made it for a party and everyone loved it! i did follow advice given and whipped the heavy cream on it's own, then gently folded it into the cream cheese/sugar/chocolate mixture. worked perfectly...and much better than i think would work doing it all together. i also made it in a trifle bowl, layering everything twice...cake, cream, toffee, cake, cream, toffee. loaded the top with toffee and drizzled with some more chocolate. yum. oh--and i also used fresh pound cake from our grocery store bakery, which i think is a better option if it's available to you, as it was perfectly moist. I did find, however, that 2 (10.75oz) packages of pound cake is more accurate for the layering.

Kettle Corn

I've been using this recipe for quite some time and I'm not sure why I never rated it. This is PERFECT!!! We used to do it on the stove with one of our pots, but now we have a whirly pop and that's even better. Perfect ratio! Love it!!!

Overnight Caramel Pecan Rolls

Awesome straight out of the oven and even a few hours later. VERY good. However, I did not care for them today (day-after) at all. They were dry and blah. So, I will definitely keep them for "day-of" gatherings only.
